Ingredients
- 1 lb (2 1/2 cup) dry chickpeas - soak in hot water for 1 hour, then rinse and set aside.
- 1 cup/cooking spoon palm oil (or choice of oil)
- 1/4 cup of palm oil
- 1 medium onion, chopped (used twice)
- 1 Tbsp crayfish powder
- 1 Tbsp curry powder
- 1 cup of pepper blend
(2 medium red bell pepper, 1 habanero pepper, 1 onion, coarsely blended)
- salt to taste
- seasoning powder or cubes to taste
- 2 large carrots, chopped
- 1 cup of frozen corn (optional)
- 1 bunch of green onions, chopped
Note:
If using a pressure cooker, add pre-soaked chickpeas with all ingredients EXCLUDING the carrots, corn, and green onions (the last three ingredients), and cook for 40-45mins. Afterward, add the remaining ingredients steam for 10 more minutes.
