Alinea is the best restaurant in the country, and the dining experience is unlike anything you have had before. Chef Grant Achatz serves up some very unusual dishes, and one of the most popular is an edible helium balloon. Customers are served the balloons and encouraged to suck in the helium before eating it. We spoke with Chef Achatz about his balloons, watched how they were made, and got to try one out.

The Phelddagrif Whelp when the restaurant is recognized on several lists such as San Pellegrino top 50 and has 3 Michelin stars, they can be as objective as they want.

I love helium filled balloon. We went to an event in New Zealand and we got so many freaking helium balloons and omg I had a blast laughing and talking like a chipmunk.

Fred Lee he had stage 4 tongue cancer buddy, and was given a few months to live. Miraculously he survived due to experimental treatment, but it seriously impacted his voice and for a while he lost his ability to taste

He had tongue cancer. Stage 4. Treatment had side effects, like on his voice. He also lost the ability to taste for a while.

He sounds like that because he had Stage 4b Squamous Cell Carcinoma, was told he had a few months to live unless they carve out his tongue and half of his face. Instead he went for experimental therapy and was working in his Michelin-starred kitchen while going through radiation treatments.

He was diagnosed with stage 4 tongue cancer. Was told he was going to lose his tongue and parts of his neck and cheeks. Not only did he kick cancers ass but he became one of the best Chefs in the World with 3 Michelin stars under his belt. He is a legend. I somehow doubt you will ever be that remarkable.

Build Blue There is no helium shortage. The US government purposefully dumped it's deposit (the largest in the world) of helium. There is a decrease in supply but it was intentionally done and thus not a shortage per se.

You pay a flat rate before by buying a ticket about 2-3 months in advance of the dinner. You show up and don't have to pay because you already did with your reservation. So balloon prices are a secret

Tied for best (3-star) in CHI with Grace Restaurant. Numerous other Michelin 3-star venues in NYC and LA, the only other cities currently rated... Best in America??? No more likely than any random NFL team as being "best" any given year
