If you love soft tofu, my favorite thing lately is throwing a block in a bowl in the microwave to heat it up, and then topping it with soy sauce, sesame oil, chili oil, sesame seeds, and chives 😋! I’m so glad you’ve discovered Libby, I’ve been using it for a couple of years now and have saved so much money on books as well!

What I do is create a big list of books that I want to read, and then keep a look out for them at the thrift store. I personally love sci-fi and fantasy, and it seems like the people who donate to the thrift store do too, because I've found a lot of books that were on my list at the thrift store! I've found it more well stocked than my closest library sometimes 😅

i freaking love Libby! i really resonate with the reset approach of "what's working and what isn't?" i do a quarterly reset/check in with myself and that's the main thing i ask myself. it encourages guilt free change and letting go and recognizing what you do need.

Glad you’re liking Libby! A lot of libraries also have Hoopla, which I prefer because there’s no waiting for books- everything is immediately available. I’m also the type who likes to read the book now so I thought you might appreciate the tip. The wait times on Libby can drive me crazy. 😅

Thank you so much for recommending Libby! I had no idea this kind of thing existed. Signed up for the Berlin library for just 10 eur/year and now I have access to countless great books and most importantly for me, audiobooks! Best purchase of the year so far😄

With the book problem: I get it plus also seeing everyone read so many books it put me in a bad slump so I had to get off instagram and stop watching booktube for a little bit to get back into reading what I wanted to read and feel happy about it. But I am so happy you were able to get a library card and also do the programs that the library holds because those are always fun!

5:17 - Hey Immy thanks for the info on your bread proofing box. Recently I asked for details on this new purchase somewhere on one of your platforms. I really appreciate you sharing your experiences with us on how you use it, and if it does the job effectively. I am on sabbatical from teaching right now and I want to follow your lead with making homemade tempeh, fresh-baked bread (cuz it’s so much cheaper to make at home), and possibly plant-based yogurt too. Thanks for the info. I deliberated for a whole year when I bought my food processor after going plant-based. I don’t think I will go an entire year on thinking about this possible purchase. Thanks again. Also can I just share with y’all how leisurely it is for me to watch your videos now that I am not in my sewing classroom surrounded by dozens teenagers all day long, nor am I juggling a hectic schedule. Love it, love your content. TYSM!! Ⓜary💕🍞🥯

@@jemma50 Truth be known Jemma, although I’m now technically on sabbatical as of this past Monday, I am still in the school working in my classroom. I have 22 sewing machines to service, report cards to finish up, classroom inventory to complete, and the list goes on. But my door is closed and my classroom is still and quiet without students around, so I am getting lots done very quickly. It will really hit me next week when I am not at school. We got a dump of snow today so I didn’t mind working inside. Can you believe that it’s February already? I’m ready for winter to end, and I bet you are too. Take care, and Happy February to you. Woohoo! So happy you mentioned libraries! As a librarian I'm always trying to promote how amazing they are. Why buy books when you can borrow them for free?! In the UK a lot of libraries also use BorrowBox for audio and ebooks, which is also free!

It would be greatly interesting to see what and how you “gear up” for the adventuring you want to do. Backpacking, car-camping, skiing, and outdoor-ing can be “stuff” intensive. How you do it will be an adventure in itself. 🌿

Excellent! It’s really good you’ve learned these thing at 30. I learned them in my 40’s but now I’m even more sure why I stopped doing and buying things I won’t use. I use my journal for everything. it’s just a plain dark green dot grid journal and I buy 3 to use for the year. I still have amazon unlimited but I also use my library card and Libby as well. I’m still debating if I going to keep amazon prime. I use it to order al lot of my spices and to send my grand daughter and her parents stuff and my daughter uses it as well. I have cut my expenses down to $2000.00 a month and I can live very well on that amount. I have no debt so retirement is looking really good for me. enjoy your week love!

Excellent goals! One thing I do to keep cooking interesting and learn new skills is to check out a different cookbook from the library each week. Check out the other things your library has to offer. Most offer ebooks, audio books, Hoopla but also passes to museums, national parks, events and many other things. I have had free access to Great Courses, language learning (Mango), Creativebug and checkouts for knitting needles, crochet hooks and seed exchanges. My last library offered free classes on homemade lotions/balms and card making. Well worth a deep dive to see what's available within your county.

Unintentionally… this recently happened to me. It was the BEST thing ever!! Here’s my story: My passion is skill toys, specifically freestyle yoyos and kendama. I think hobbies are integral to one’s happiness and I love learning, practicing, teaching and performing with skill toys. (I think mostly because, as I age, I no longer play sports any more.) Recently I needed some info on a specific yoyo that I purchased back in 2018. (My skill toys can be very expensive and they are all purchased from online specialty stores.). OMG… what an eye-opener!!! Just digging through the old receipts and paperwork, and seeing how much I used to spend was eye-opening!!! No ego here, but the swelling pride that I felt for how I have, over the past number of years, made all my spending intentional and subject to my budgeting practices. I can honestly say that now I only buy gear that I actually need to improve my skills… and not to “build a collection”. The moral of my story is… I highly recommend saving and reviewing your receipts. This really prompted me to continue being a conscious consumer and make better decisions for myself and my bank account. Thanks for this great video today Immy… it really made me think. PS - more dumpling in 2023 please🤣. I am loving your content, and want to thank-you for being so totally awesome!! Ⓜary🪀

On a no book buy as well. Found even with thrifting them, I started getting more of a collection that a curation. Always helps having a library nearby! I’ll also say the most walkable cities in the USA are still not nearly as walkable as in the UK. Even public transport can be inconsistent. Y area is pretty walkable as well but not nearly as well as I’d like.

I must mention, regarding composting, the only part of Colorado I have seen a decent composting service is in Boulder County. Everywhere else it’s basically non-existent… but! Due to limited space, my family has invested in a composting machine and we load it with food scraps every night. In the morning it is dried and crumbled- the perfect amount to mix into our little garden! We’re a large family so trying to compost the slow way took way too much space. 😅

I set my reading goal low and was able to achieve it easily for the first time ever 😂. (School then work has hindered me in the past). I use Libby too, it’s wonderful. Turn your notifications on and if you are unable to borrow said book when it’s available you can “kick the can down the road” and set to receive the book for a different date. So, put a bunch of books on your wait list and pay it forward to others in the list when you can. It’s fun, you’ll like it. And it’s freeeeee! 🙌📚

Try to make vegetable coconut stew (sayur masak lemak). It's sooo delicious and comforting when eating with white rice. I'm from Malaysia, whenever I feel like eating tasty vegetables dishes, I make a light coconut stew. All you need are 1) aromatics, 2) coconut milk, 3) vegetables of your choice. For aromatics, you pulp together onions, garlic, ginger, chilli(optional) and lemongrass(also optional). Traditionally we add in dried anchovies for that umami taste, but you can substitute with miso for vegans. You can also add a pinch of tumeric powder for colour (but the best is to use pulped fresh tumeric). Instruction: first, you lightly fry the aromatics, then you put the coconut milk & vegetables in one pot together with 1-2 cup of water, boil until vegetables are cooked. Add salt/sugar for taste (most Southeast Asian dishes would add a tiny bit of sugar to balance the heat from chilli and add a bit of savoury-ness, but you can leave that out if you prefer just salt). My go-to vegetables when making the coconut stew is combining Leafy vegetable with a root vegetable, these recipes are also traditional Malay cuisines: 1) amaranth leaves (bayam) with pumpkin coconut stew. 2) young cassava leaves (pucuk ubi kayu) with sweet potato coconut stew. 3) yam stem and roots (batang & ubi keladi) coconut stew. 4) mixed vegetable and tempe coconut stew (sayur lodeh). 5) Young jackfruit (nangka muda) coconut stew.

while not vegan I am trying to get towards more plant based protein versus animal for my chronic kidney disease stage 2, Ohh diabetes the gift that keeps on giving, ugh. But I am going into african vegan meals. atm, I just made my first batch of african vegan red red stew and it turned out ok. bit watery since I didn't deseed the tomatoes before popping them in, but still very good and cooking dried beans was actually quite easy. Also made some pickled refridgerator onions and plantain bread. the bread has butter and eggs in it. Trying to find something that more plant based without changing the taste and texture of it. it's like banana bread but not as sweet and more solid and I really liked it. Hope this helps out with the what-to-eat-next food block.

Hi there… I wanted to say a huge congratulations to you for your efforts and the success that you’ve been experiencing with moving toward a plant-based diet. My partner has a congenital kidney disease and he was down to a GFR of 9 before he received his live kidney transplant from his brother in 2018. We moved toward plant-based eating right after he received his new kidney. He was 57 at the time, and will soon be 62. He maintains a GFR in the low to mid-50’s and his bloodwork, while not perfect, has never been better. I am turning 60 soon and I come from a long line of diabetics in my family history. I just got bloodwork done recently… I have no diabetes indicators and my bloodwork looks great. We have also vastly reduced our consumption of alcohol which is a big health trend in 🇨🇦 right now. The doctor told me that what we are doing is working and to keep moving forward in this direction. I want to encourage you to stick with it… find what you like to eat and to cook, and build habits that support cooking from scratch with wholesome ingredients. You can do it!! Also, I love your focus on African vegan meals. We live in the wilderness of northern 🇨🇦, and while all our neighbours are out fishing and hunting, we love to make ethnic food and plant-based meals at home. You are awesome and I am with you all the way on this one!! Keep up the great work my friend!! Ⓜary🌿

What’s your feeling about the size of an American fridge? Because I try not to buy too much at once to avoid food waste, my fridge often looks empty. I’ve even been questioned by guests why my fridge isn’t full. 😅 When I lived abroad in the UK, I thought the smaller fridge size makes more sense. I don’t need all that room! And the smaller freezer is a downside because I love meal prepping and storing foods to last, but I often run out of space.
