LIONS MANE MUSHROOM SCHNITZEL, BREADED ‘PORK CHOP CUTLETS and APPLE SAUCE. Today we transform the humble Lion's Mane mushroom into a delectable feast that's sure to impress! In this episode, we're cooking up a storm with our Vegan 'Pork Chops' and Apple Sauce, with sweet potatoes, Courgette/Zucchini and baby Spinach.
Using my signature technique of perfectly pan-pressing the mushrooms to get that meaty texture, crafting a crispy Panko breadcrumb crust just like the Shake-N-Bake from growing up. With a deliciously spiced apple sauce. Whether you're a seasoned chef or just curious about whole food alternatives, this mushroom recipe is a delightful twist on a comfort classic.

Vegan "Pork Chops" with Lion's Mane Mushroom and Apple Sauce
Serves: 2
Ingredients:
For the "Pork Chops":
2 Lion's Mane Mushrooms (each the size of a baseball)
2 cups Panko bread crumbs
1.5 cups Flour
1 cup Plant-based milk
¼ cup Parsley (dry or fresh, chopped)
2 tbsp Maple syrup
1 tbsp Vegan mayo or vegan yogurt
2 tsp Granulated onion
2 tsp Smoked paprika
2 tbsp Sage & Onion Blend seasoning (or vegan "pork" seasoning)
Salt and pepper, to taste
Rice Bran Oil (or any neutral-flavored oil for cooking)
For the Apple Sauce:
4 medium Granny Smith Apples (peeled, cored, and roughly chopped)
¼ cup Water
1 tbsp Cinnamon
1 tbsp Brown Sugar
1 tsp Lemon zest
2 tbsp Lemon juice
For the Sweet Potatoes:
2 Large Sweet Potatoes
Additional Maple syrup, salt, black pepper, and fresh thyme for seasoning
Instructions:
Preheat your oven to 190°C (375°F) with the fan/convection setting on.
For the "Pork Chops": Heat a cast iron pan over medium-high heat. Once hot, drizzle oil to coat the bottom of the pan.
Place the Lion's Mane mushrooms in the pan. Let them cook for a minute before placing another pan on top to weigh them down, using the pressing technique demonstrated in the video.
Flip the mushrooms occasionally, applying different degrees of pressure to expel moisture and flatten them to the desired thickness. Splash water into the pan occasionally to create steam, aiding the cooking process.
Once cooked, remove the mushrooms from the pan and set them aside to cool.
Breading Station Setup:
Prepare three stations for breading:
Seasoned flour: Combine flour, granulated onion, smoked paprika, sage & onion seasoning, salt, and pepper.
Wet mix: Combine plant-based milk, maple syrup, and vegan mayo or yogurt.
Seasoned Panko: Combine Panko crumbs with parsley.
Dredge each mushroom cutlet in the seasoned flour, dip in the wet mix, then coat with seasoned Panko crumbs.
For the Apple Sauce:
In a medium saucepot, combine apples, water, cinnamon, brown sugar, lemon zest, and lemon juice.
Cover and simmer on medium-low heat for 30 minutes, stirring occasionally, until apples are fork-tender and break apart easily. Mash or blend to desired consistency.
For the Sweet Potatoes:
Place sweet potatoes on a baking tray and roast in the preheated oven for 35-45 minutes or until a skewer pierces through easily.
Allow the potatoes to cool enough to handle, then peel off the skins.
Mash the sweet potatoes in a bowl and season with maple syrup, salt, black pepper, and fresh chopped thyme.
To Serve:
Plate the breaded Lion's Mane mushrooms alongside the sweet potato mash.
Serve with a generous helping of homemade apple sauce.

My husband loves Japanese knives and saws. We also house and dog sit. We’ve started bringing our own knives, because other people’s knives are dull and scary. He also loves his cast iron skillets. Nothing compares to a well seasoned skillet.

Thanks to Chef Sarno I searched for a local mushroom grower (MycoMalta). It was not an easy feat because I live on a very warm, small island. But with some patience and luck, I bought three kits: Lion’s Mane, Grey Oyster, and Chestnut. Every time they pin and flush, I take baby pictures like an overjoyed kid, and share them with my family. When you first taste cooked mushrooms freshly harvested from your own home, you’re in for a priceless treat. The Grey Oysters were first to flush, and their ‘meat’ was just like slow-roasted rabbit (which, most horridly and unfortunately, is a traditional dish locally - poor rabbits…). Well, the Lion’s Mane is next and I am set to use this video as recipe guidelines. It will be another one for hashtag ‘SarnoSear’.

When I saw you spoon out the sweet potato and leave so much stuck to the bowl I thought “aw no, what a waste!”, but so glad to see The Beautiful Frankie help with “cleaning the dishes”😁😜. Great looking food. I’m going to look into growing some lion’s mane myself as I’ve never seen it where I live.

Derek, outside in tall grass in the UK in the start of December pretty much mimicks their natural environment for growing, no wonder it grew another flush! Just keep protected from direct rain and I am certain the blocks will outperform the ones grown indoors (from around October until frost hits).

Here in San Diego, I buy mine from Sprouts, but I found a grower near by I Escondido. It is called mountain meadows mushrooms Thank you For introducing Lions manes mushroom to me. I do miss the taste of meat, so this has been great.

Going to have to try this when my Lions Mane fruits. Never seen anyone sharpen a Japanese blade like that, on mine I sharpen just one side until a tiny burr forms on the flat side then just lightly touch that flat side to remove burr. All my Japanese knives are single bevel at about a 15 degree angle.

Looks delicious Derek... never thought of adding vegan mayo to the "wet" ingredients if you were making a wannabe pork schnitzel or a breaded chicken cutlet using mushrooms... 😏😏😏😏😏 By the way, I made your The Perfect all in ONE Thanksgiving Dinner | Christmas, Sunday Roast last night [here] for dinner using vegan chick'n pieces instead of tofu, but forget to add the mushrooms and made my own vegan chick'n bouilion since I couldn't find one that plays in my figurative wheel house.. then made air fried gluten free vegan croutons the day before... Speaking of my my own vegan chick'n bouilion, it smelled and tasted like homemade chicken and noodle soup because I quickly sautéed my veggies in it with about a splash to a cup of hot water over medium heat Ironically I have some leftover for lunch / dinner today [here]... Anyway hope you and Frankie are having a safe healthy splendid Sunday afternoon...bon appetit As for the place I can get my hands on lions mane mushrooms is Sprouts, but I have to wait until the 15th of January this upcoming year because they're opening a new location in the Port Charlotte, FL area and I've never shopped at one before...😊😊😊😊😊

This is making my mouth watering so much, I can't stand it! :D My only sadness is that I can't seem to find such mushrooms here in Czech Republic. Lately I've been wondering if a sandwhich maker is a good idea for squeezing mushroom clumps into "steaks". I'll try it with oyster shrooms and get back to you later.

I would LOVE your take on buffalo cauliflower quesadillas or tacos.... That's if you like cauliflower! I am transitioning to a whole foods plant based diet and buffalo wings have been a weakness of mine.. I hear the buffalo cauliflower is delicious.. I've been watching videos on it but would really love your take on it as you always take things up a notch and I'm a foodie LOL....

Great videos! Please make more dishes with normal or king oyster mushrooms that are easily available to buy in supermarkets. Lions mane mushroom is so expensive to buy or grow and no one would use it for everyday cooking. Few ideas since bbq season has started, king oyster and normal oyster…..

One of the worst things about my kitchen and cooking is your pet peeve. Though I have tried a number of ways and gadgets to sharpen my knives, even grinding with a stone sander drill bit, but alas, a terrible failure. Never tried the whet stone. Will give it a go. My Mum always had sharp knives and said they should never go in the dishwasher. Should have stuck to her advice

I love your channel! I’ll be honest, I do miss meat The mouth full of meat. And I do know that mushrooms can do that! It would be nice if it was more mushroom production. A lot of places use over engineered meat replacements, when I think these, and simple bean burgers (there’s so many recipes it’s unreal) can be made by restaurants (fast food or otherwise) Beyond meat taste good (it taste like meat), but bean burgers can be just as good and cheaper, while these take the cake in terms of mouth feel

I have never seen mushrooms the size u have anywhere in my area. The lions mane I find are small. I have a question about sharpening ur knives. How often? And can u sharpen serrated knives?

The recipe notes below video say, "rice bran oil, or any neutral flavored oil for cooking." I'm making sure it's for high heat cooking, like maybe avocado oil.

in case anybody cares - probably not a good idea to sharpen your knives in a place where you're going to be handling your food. Sharpening creates a dust of fine metal particles, and that stuff is not something you want getting on your food or into your body.
