ALLULOSE ALL THE WAY. It is the magic one, forget all the rest. My allulose simple syrup is probably better than even sugar simple syrup. I haven't weighed it out yet but it looks like allulose dissolves better in water than sugar does so you will achieve the same sweetness as real sugar simple syrup. And it's thick and syrup-y, yeah! Another plus: bacteria can't live off it so you will never get nasty residue after a while - even when storing at room temperature.

i made mine with 1.5 parts allulose to 1 part water. Allulose thickens like sugar so no need for the xanthum gum.

My first batch crystallized a tiny bit and the last batch didn't at all. It really isn't much if at all. Perhaps Allulose would help. It is a great sweetener just expensive where I am.

Yes, it would work for sure. You could even add almond extract or vanilla extract if you want it that particular flavour.

If you r putting erythritol which is sweetener so why r you putting extra stevia drops?

No expert here, but usually using erythritol + one other sweetener improves the flavor to more closely approximate cane sugar. I do not experience the cooling aftertaste myself. I just had almond pancakes with erythritol "maple syrup" for breakfast & it was great. (I used xanthan for years, but allow myself more carbs now days, so I used arrowroot powder for thickener. I do think it improves the taste a little bit. Xanthan is so non-paleo. It always makes me a bit nervous to use it.

Since erythritol tends to crystallize rather easily, have you used allulose to make the simple syrup instead?

My second batch of this didn't crystallize at all. I think Allulose would work great but haven't tried it as it is rather expensive to get here in Canada.

Does this give off that menthol cooling mouth feel? That's the one thing I can't stand about erythritol and I don't want that to overpower the taste of the drink

Is there one specifically? Have uou tried different kinds? Eg: xylitol vs erythritol etc? Perhaps some don't do well with you but others may??

Why need thickener when the thickness is very subtle in natural syrup and when is mix in a cocktail, you can’t even tell the difference?

I believe you can tell. As I mention, it is that cocktail mouth feel that it adds. But if you really don't want to, it would still work without the xanthan gum.
