In this video I will share pumpkin cake recipe that you can use for parties or holidays, I usually make this starting in autumn. So if you are looking for a mini cake for the coming holidays, this is for you.
*This recipe is good for square pan or you can use muffin cups and design it as you like.
In the photo, for the pumpkin stackings or mini cake top- I use 50 grams of cream cheese and 30 grams of powdered sugar- you can adjust the sweetness as you wish.
And for the muffin top- I used mashed pumpkin 1 cup with 100 grams of cream cheese plus 3 tablespoon of powdered sugar for 10 cups of muffin.(again, you can adjust the sweetness)
For the main cake recipe:
- 2 cups of mashed pumpkin
-1 cup of cake flour or all purpose flour
-6 grams of baking powder
-80 grams of brown sugar
-90 grams of melted butter ( I use commercial butter so I don't put salt in my cake)
-2-3 beaten eggs
