George ad usual a brilliant yet dimple adaptation of something French based, probably provencal style msrrief to jspanese tastes.. I would never have thought of doing this and have always used stsndsrd not japanese eggplants. This recipe is genius. I can think of variations but did you use ham or pork belly,? I always try to perfect the original technique before variations. This is good advice for all home cooks i think.

I think I will use anchovy instead of ham when my eggplants are ready to be picked in the garden.
