The Lantern!

3 жыл бұрынAn old school lantern in disguise, this one is a very technical pastry, including a transparent thin glass made out of sugar and a candle full of surprises.
It is composed with a delicious pecan sponge baked with a crunchy pecan sable, an oozing pecan praline, a pecan cremeux, a pecan mousse, a caramelized marshmallow and some crunchy caramelized pecan chunks.

I love how he’s not just making it look beautiful like all the cooking shows where they just use sheet cakes and marzipan. He’s building an actual dessert with thought to how it will taste. It’s thoughtful consideration of each component and how it will all come together as a delicious dessert. Pretty amazing. He’s making it 50x harder on himself for flavor quality.

What I love about this one is the design is implemented in a unique way so that some of the components hide treats in the design. Considering the flavors themselves, I’m tempted to try to make a basic version of just the dessert at the bottom of the lantern to see how it turns out. As a side note, these are the kinds of creations that made me consider culinary and pastry school as a kid and preteen. I eventually did a 180 and switched to STEM, but culinary arts remains a passion of mine.

You think it’s a 180, but culinary arts and a lot of the sciences have a ton in common. I’ve been working as a chemist in industry for a 10 years and cooking/baking is my favorite pastime. It’s exactly like a low stress version of my job where I get to be as creative as I want with no oversight.

Everything he creates are not just moulded chocolate structures. I mean he could easily make them with moulds filled with chocolate. But he goes beyond that and applies lots of creativity with the fillings too.
