Sous Chef Valeria Benner of Lockwood in the Palmer House Hilton in Chicago wears her culinary heart on her sleeve, literally, in the form of knives, whisks, carrots, bees and a pin-up girl in a toque tattoos. As for the shish kebab and skull? Benner says it reminds her of a chef's fate: "It skewers your entire life, once you get into food and culinary. You're a lifer. There's no getting out; once a chef always a chef in some way or another," she says.
