I say just run the whole thing though an extra fine grinder a time or two. Bam! Cheap plentiful Mcfish sandwiches

I can't imagine why anyone would do this to a ribeye except to take advantage of fools who don't even know they're being ripped off.

I didn't know that we could get rid of fishbones by a grinder. Fish bones and skins can be used to make fish broth. Carps from clean water are not smelly.

If the cap is the 3rd most tender, what are the first and second? I would never eat a ribeye without the cap.

Art Whitting exactly!! Now you can eat the most flavorful/ tender part of the ribeye.. She’s not trying to sell the ribeye without the cap but instead trying to sell just the cap(the best muscle in the entire cow).

I would think that if there was a way to commercially take out those big bones to make a fish patties or stix ,or fish cake that it could become a product to be sold world wide, China,Japan,Vietnam,Philippines,S Korea, Thailand,would be key buyers,they export this type of product to the US,we should be able to sell back ! As long as the fish come from clean water ,it would seem like everyone would jump onboard for an organic protein source,Vietnamese people make a fish paste patty called "cha ca" that is fried I've eaten this many times it's so good !

I've dined twice at Jean Georges restaurant and really enjoyed both meals. I've dined four times at Alinea and loved it every time. I appreciate both of these chefs but I know what J-G means ... Achatz can blow your mind :)
