We prefer Branston beans. I boil gammon joints in cider then glaze it with a mixture of honey, black treacle and whole grain mustard. When we go out for breakfast I get a large one to share with the dog. Duck eggs are great. Watching this after a cereal and toast breakfast is making my month water. Good high quality produce.

@@thefunkyfarmer we do have back bacon, but it’s very lean. It’s the whole loin and breaded with cornmeal. You wind up slicing it yourself. It comes almost as a mini roast. It’s a really nice cut of meat. It’s actually what comes on MacDonalds English McMuffin here.

Richard you are Cruel😃. I could smell Bacon and Sausages from 200 miles away. Agree with you (and many others in the comments) on the Beans, much prefer Branston, and around where I live they're half the price of the others. Love to see kids eating and enjoying good food. Quails eggs... best boiled or, if you fry them, I saw them being cooked on street food stalls in Myanmar (Burma), they use something like a cake tin, the ones you use to bake small muffins etc, just brush the tins with a drop of oil or, use one of the spray cooking oils. Best done over Gas or maybe in the oven. They're really nice as a simple lunch snack or, with your ploughmans or, in a salad. The way I like them is to make a simple Veg Curry from scratch, add small wedges of tomato and, a handful of boiled Quail eggs and let it cook out. Rice however you like it and enjoy. You do need at least 4 or 6 each. Delicious😋. Just one thing... I think Buddy should be re-named Hoover.

You missed a trick when you were over in Ireland. Could have stocked up on potato bread and soda farls. Perfect to go with the eggs, sausage and bacon. Don't think they're available in UK

I love ham hocks, roasted the crackling is amazing and the ham is great in sandwiches, soups, ham hock mash and cabbage or just plain ol ham egg and chips. You could also do them in the pressure cooker (Cosori pressure cookers are amazing, electric and automatic I.e not scary ) 20 mins and finish the crackling in the oven. You will love these, tastiest ham ever and bones really good for ham stock and soup bases. Ps if they were not cured with the bacon you can do all above but not quite as ham like more pork like. I bet you will be seeking these out in future, they are lovely. Enjoy.

Here's a question, Richard: if I sent you dried beans for baking, and a good recipe, would you try making baked beans? They def need to have an overnight soak before fixing, then at least a two hour bake, maybe longer.

So for the bacon (streaky and back bacon) are they cured the same? What seasoning is used in the curing process? I have had bacon here in the US called english bacon it was back bacon but it didn't seem to be cured. The salt content seemed very low.

I'm not sure about that but i think so. You seem to do a lot of oak smoked streaky bacon in the states. I didn't see any back bacon when i was there which is what we normally have here. it should definitely be cured but i don't know the process

i do go there occasionally, but it's easier for Ian to come to me as he passes my door regularly visiting his land or his father who lives just up the road
