I love eating these! We usually wrap them in lettuce and herbs before we dip them, much like we eat our fried spring rolls. For presentation purposes, put a shrimp in the center of each one (Vietnamese people eat the small shrimp with head on). Yummy!

looks like our ukoy/okoy here in the Philippines.. most of the time, we use flat squash as the main ingredient, then we add sweet potatoes for added sweetness :) :) God Bless you more Marion 🙏

I made a similar recipe using spiral sweet potatoes & shrimps 2 New Year Eve's ago & it turned out delicious! I never thought about doing sweet potatoes matchstick instead, this would be a different way of doing them. Love the final results, very delicious looking!! 💕

Filipinos have something similar called “oh-koy” from what it looks like. The Filipino version of this looks more filling. And we dip it in vinegar or spicy vinegar
