About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZfaq.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

I'm new to knife sharpening, and very impressed with how sharp that knife is. It glides through the entire length of that pineapple almost like it wasn't there. That knife is s-h-a-r-p! I can go through a tomato like that (haha)! Wish they'd mention the name and make of that knife. Probably out of my price range. OH! It's listed towards the end of the SHOW MORE - "Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel." Who sharpened it? Final grit? 8000? 10,000? [Edit: 9:12 - that doesn't look like the Minonkuni on the retail website. ??]

I love how in most "fruit ninja" videos, you see a person cutting and peeling food really fast and precise, but in this video, the chef started really simple and slowly making you think this is some sort of clickbait then as the video progresses, the fruit he cut keep getting more and more artistic.

I'mma go with "not exactly"... BUUuuuuUUUT... Now that you mention that, the two of them taking turns between throwing the fruit and trying to "catch" it with the sword would make for a cool show... or two... or a series or something. I'm sure one could find a satisfactorily anal-retentive method for "scoring" the contest... you know, to keep everyone engaged and -milk it- ...er... generate a truly academic contest experience. ...yeah... I think I'mma go with that. ;o)

Aaah, his knife. When I married 35 years ago, I was gifted a knife, one GOOD knife, that is my reliable friend. (Sorry, Japan, but it was American-made, and as tough, resilient and sharp as my home, Texas.) If you're just starting out, save up, do your research, and get one good, good knife, if nothing else. I'm old and now I have money enough that I've bought some "better knives", but they're just NOT as good. My daughters willl have to dicker over that knife when I'm gone. My Good Knife fed us for years, and never failed me. Once you get your Good Knife, PRACTICE. I used to use a food processor to chop up a bag of onions, to avoid death by fumes, but nowadays, with my Good Knife, I'm faster and more precise. PRACTICE....Watch knife skills videos. Go mangle some stuff. Did you think these skills came from a fairy godmother?

I loved this video and the chef, such artistry! For awhile I was lost in the beauty of the delicacy and then it ended and I was back to real world problems. I guess I'll just watch it again🌷🎶💁🏻👏🏻

You can cook down the other bits into a compote, or something else delicious where the shape doesn't matter :)
