it's composed with a bottom of crunchy Swiss vanilla meringue, a vanilla mascarpone whipped cream, a soft raspberry cremeux, a lime joconde sponge soaked in a Raspberry liquor syrup and a fresh red berry compote.

@@ASmith-jn7kf That's the thing-- a lot of elaborately decorated "food" pieces are only technically edible. Guichon eating each of his to prove they taste as good as they look is very noteworthy, considering he's working in a genre dominated by solid fondant and baker's chocolate sculpts.

If only the school was in England I'd be signing up to learn how to make some beautiful creations. Nothing like the really intricate 3 or 4 day chocolate sculptures but maybe this beautiful rose would be possible, it looks gorgeous... and delicious 😍

Ridiculously great.. Yes amazingly we can feel the fluffiness.. As always rose technique at the begining of video is better than what we see out there being done... A man with a lot of skill... Paid for it well.. To teack it back and make a fortune
