The Sweet Burger!

The perfect American sweet dessert, I originally created it for "School of Chocolate"!
Each components of this dessert bring a very distinctive flavor and texture to the whole, it is composed with a caramel macaron shell, a passion fruit paste (the "lettuce"), a cranberry/strawberry jelly (the "ketchup"), thin slices of slow cooked mangos in vanilla and cranberry (the "tomatoes"), a coconut whipped cream with an exotic compote (the "patty"), a passion fruit/mango jellification (the "cheddar cheese") and a kiwi jellification (the "pickle").

Just finished watching School of Chocolate and I loved it! First cooking show/competition I've seen that's main goal is to TEACH rather than promote a competitive atmosphere. And your teaching methods were so calm and useful that I can honestly say there were no losers in the school. All of them brought home new techniques and confidence to help them in their respective careers. Just mad respect for you Chef!

Yeah, what I really liked about the show was that no one got sent home for failing a task. Even if they didn't succeed at a task, they could all still stay and keep learning and that just made it a lot better than most cooking shows in my opinion.

Competition is good. Shame is not. Believe me, those people were still competing to be the best. They just weren't being berated and shamed for falling short. Key difference there.

If someone gave me this and told me it was a real burger, I'd probably throw up as soon as I bit it, simply because the texture and flavor was not at all like how I'd think.

Honest to goodness, I imagined you were going to just slice the kiwi, and use the slices, unprocessed, for the pickle/s. But nooooooooo... That. Was better than I imagined, by far. Lovely! (Also liked the air-brushed grill marks.)

I love how instead of just slapping fondant on sponge cake and calling it good, you actually take the time to figure out how to make it a good cake. Like the kiwi pickles here? Genius! I love it! Your cakes are both delicious to look at and delicious to eat.

i thought the kiwi was going to be the pickle, then it got blended and it threw me way off…..and usual you produce and spectacular product. i think that the perfect word for you and what you do…..spectacular !
