The Telephone!

This one is full of little techniques to create this retro telephone.
I wanted to work with an ingredient not very well known (Rhubarb) that I've paired with strawberry.
It is composed with a thin layer of crunchy sable, a delicious strawberry financier, a sous vide compote of rhubarb and strawberry, a strawberry mousse and topped with a crunchy streusel hidden in the handset.
The top part is crafted with a Ruby chocolate naturally pink!

y'know, I think one of my favourite things about these creations is the fact that they're actually edible, and made with quality ingredients. when I was a kid my mom would make a strawberry rhubarb crumble in the summer. so seeing the artistry and the delicious, real ingredients together made my day. I love rhubarb!

My gran made strawberry rhubarb jelly I would eat it all! She said I only grew when I was at her house! It's true. I had 8 brothers and I had to find for my self.

What’s great about these creations is the fact that they’re not like what most people make where it’s just mostly fondant with a sliver of cake in the very centre, but rather made up of a variety of ingredients that look extremely delicious. I legit get hungry watching him cut into his work at the end, unlike fondant creations, which look cool but I know I would essentially be eating mostly moldable sugar.

*chocolate phone rings “Hello? We’ve been trying to reach you about your car’s extended warranty” Now if i’m ever frustrated with a call… i can just eat the phone and feel better! All jokes aside though, i can’t imagine all the planning ahead and careful measurements this must have taken. It was all clearly worth it though, this looks amazing!!!

It's especially hard to do it yet still make it, you know, actually edible instead of the forsaken horrors of Fondant that most "actually a cake" gags end up as.

Oh man! Where I grew up, strawberries and rhubard were always in season on my birthday and my family had a rhubarb patch. This would be so delicious!

@@gendernotfound1994 the entire outside was chocolate, I'm pretty sure, chocolate with food dye. Everything he poured into molds and then waited to harden was chocolate.

@@natalievegas why would it melt? It has a melting point higher than usual room temperature, about 20°f higher than room temp at that.

@@sarahwatson1043 I guess different chocolates have a higher melting point. I’ve played w chocolate and it’s melted from my hand warmth. I’m sure his work space is chilled

I have such mixed emotions. On one hand, it is artistic and amazing. The creativity and complexity is astounding! I'm very impressed by that. On the other hand, it's a rhubarb cake. The fondant work is neat, but it's an 8x8 rhubarb cake. Eliminate the useless phone, and it's a church potluck cake.
