INGREDIENTS
12 large shell-on shrimp, peeled and deveined, shells reserved
1 teaspoon Diamond Crystal kosher salt, plus more to taste
½ teaspoon dried oregano
½ teaspoon dried thyme
½ teaspoon garlic powder
½ teaspoons onion powder
½ teaspoon freshly ground black pepper
¼ teaspoon smoked paprika
¼ teaspoon ground annatto
¼ teaspoon ground cumin
4 tablespoons extra-virgin olive oil, divided
2 green plantains
3 sprigs culantro (aka recao, sawtooth coriander, chadon beni), chopped
3 sprigs cilantro, chopped
1 small shallot, minced
7 garlic cloves, 4 peeled and halved, 3 peeled and whole
5 ají dulce sweet peppers, minced
1 small green cubanelle pepper, seeded and minced
Canola oil, for deep frying (at least 2 cups)
1 dried bay leaf
4 ounces Spanish-style tomato sauce or 2 tablespoons tomato paste
½ cup light beer (Medalla Light or any pilsner)
2 tablespoons unsalted butter, divided
2 oz chicharrones (fried pork rinds)

Wow! If this is the first episode, I will definitely keep an eye on this segment. As a Puerto Rican, I am very happy to see this, because often times, the only Latin food represented is Mexican, which I love and respect, but there’s so much more! I learned a few tricks here that I definitely want to try like making the stock and putting some in the mofongo. The only thing I would do different is that I put either oil OR butter, not both. But his technique looks super yummy!

Hi Sonia! The reason I use both extra virgin olive oil and butter is because I like how moist the EVOO makes the mofongo but I also love the taste of good butter along with the plátanos. Of course the proportions are adjusted accordingly. Thanks for the love!

@@cesar.ramon.perez.medero thanks for the tip! I made a mofongo and I used your trick of putting sofrito and a little broth from the meat and I loved it soooo much! I put evoo on the pilón so it wouldn’t stick and butter w the plantains. I hope there’s more videos of you coming!! Do you have a channel or ig?

I love Mufungo and Cesar is right: it is often very dry and now I know the secret! Salt water soak and don't over cook the plantains! Also I notice the plantain he uses are not ripe. Is that part of the secret? My Salvadoran in-law family only fries them when they're dark. Only change I would make is to cook the shrimp after getting the Mufungo ready so they don't over cook and get rubbery. Great video
