2kg Oxtail
1 tbsp minced garlic
Grated ginger
2tbsp green seasoning
1 table spoon all purpose
1 tbsp jerk seasoning (dry rub).
2 tbsp oxtail seasoning
1 tbsp paprika
2 tbsp garlic powder
1 tbsp onion powder
Tsp black pepper
The Binder was a bit alcohol. U can also use oil
Mix and marinate over night
Pot with oil
Tbsp brown sugar and let it Caramelised until brown then add meat in batches
After searing meat on all sides
add boiling water until meat is fully covered
Boil on high until water runs low
Then the bowl u seasoned the meat in. Add more boiling water to it and mix along with more oxtail seasoning and 1 cube of stock
Then add to the pot
Along with
Thyme
1 tbsp Green seasoning
Medium high heat ,Cover and let cook until tender and ready to eat.
Towards the end u can turn the stove down to a low heat
(Taste for salt and balance out seasoning if need be. )
Skim some of the oil in the oxtail pot to start making the sauce for the pasta
After pasta is cook about 7o percent remove
Add 2 tbsp of the oxtail oil to the skillet then
Add mince garlic
Onion
1 tsp jerk seasoning blend. (Wet )
3 types of bell pepper in julienne and
Sauté
And deglazed
.With spirit 25 mil or whine a bit more .
1 /2 cup of pasta water
Then add ur dairy
Double cream
Extra thick cream
Cheddar
Parmesan
And more bell peppers
Oxtail gravy
Pull apart a piece or 2 of the oxtail and add to the sauce
Mix and let simmer for a minute before adding the pasta
Add more oxtail gravy
Mix together everything
Stove on a low heat.
And ur done Serve and enjoy.
