As a psychiatrist and knifenut I can confirm the relaxing and therapeutic effect of freehand sharpening ❤ I tried two fixed angle sharpening systems in the past but I quit them almost immediately. The focus, joy, feeling of reward and fullfilment from having sharper and sharper knives done freehand is for me as a human being priceless.

I always thought of it like this: Fixed Angle = Lower skill floor, Sharpens faster, easier to learn, more forgiving of mistakes Freehand = Higher skill ceiling, Able to sharpen an edge with more precision, is more cost efficient and more versatile I have a fixed angle system. It works for me, but many of the knives I sent to you and got that Neeves freehand special came out far sharper than what my work sharp was capable of doing. Only took me roughly 20 minutes to sharpen but I bet it took you half an hour minimum to put your edge on the same knife. I think for cheaper knives or frequent users a fixed angle will work but for when you want to put on the best edge possible nothing beats free hand in the hands of an expert sharpener. Because as you said the knowledge can go anywhere with you but a fixed angle system won't fit in the pocket like you demonstrated in the video.

I like honing my edges recreationally actually. I like to make sure all my edges are always touched up. But that's me, I looove honing on ceramic! 🥰 I agree that it can be therapeutic and / or meditative. Because that's exactly what I do to enjoy myself, lol, one of the things.

Great video!! Loved it. I once had a conversation with James Gibson. As we chatted he was freehand sharpening a young man's knife. Inside of 45 minutes, Mr. Gibson had put a razor's edge on a Scandi grind fixed blade and a flat grind folding knife. Thank you for the video. The simple stones and practice. Keep up the content.

Get both. I get perfect edges on my fixed angled system and good edges sometimes great ones on my stones. I've got a ways to go on that but I feel pretty confident with it.

One negative you didn't mention regarding stones is skill decay. If you only have a small set of knives and your frequency of use is low enough that you don't need to hit the stones that often is very hard to "keep your eye" in and if you have a break in sharpening that muscle memory can be lost. Sharpening is not like riding a bike, it might be after 5 years of sharpening daily but for those of us that maybe need to sharpen a knife once a month is a significant obstacle in learning free hand.

Work Sharp WSBCHBSS Benchstone Knife Sharpener is what I use 90% of the time, although I have the Work Sharp Professional Precision Adjust Knife Sharpener Tool and the Work Sharp Ken Onion Knife Sharpener Tool. The latter two have never been used quite yet.

It gets progressively harder to sharpen consistently the lower your edge angle goes, so for those occasion (reprofiling pocket knives) a fixed angle sharpener is great. Otherwise freehanding is faster and the larger stones dish slower.

Great Vid! Purchased a Wasabi knife sharpener and i always have a time compensating for the angle differance of the sharpening system when you flip the knife. The angle changes by 1.7 and i have to readjust. I can get a beautiful mirror v-grind edge now that i know how to adjust for the systems weaknesses.🎉🎉

I think everyone needs to learn freehand for most of the reasons you said but i only sharpen the kitchen knives 3 ro 4 times a year and while i used to get mirror edges when i sharened evey week. With my edgepro set up i can get mirror edges faster and less wrist pain.

I appreciate the time and effort of this video. I will probably stick to fixed sharpening because I already have too many things I'm having to learn and do (IT, management, controls + home stuff with plumbing, electrical, and drywall (uggh)), but I can definately appreciate the craft of hand sharpening if I had the time, lol

A very fun vid, shootout to kara for making an appearance. Biggest difference i find in the two is with freehand being able to balance what the edge looks like easier especially on a poorly ground knife. I use both freehand and a system on occasion. One of the big boneses you get on a fixed angle is the ability to stop at any time and pick up where you left off even a day later and continue sharpening that knife as long as you leave it set up in the system, no guessing what side you were working on or what stone you were using at the moment you stopped. For portable i keep a worksharp guided field sharpener in my bag when traveling but i also keep a set of DMT credit card sharpeners in my wallet and I'm able to touch up any edge with those. They come with a Medium, Fine, and Extra Fine grits for touch ups on the go. They also double as files if i ever need them too, as in removing a burr or sharp Corner on something. The amount of options available for sharpening supplies is growing all the time including diamonds, regular stones, strops and compound, systems or free hand stuff. Nice to see innovation as well going strong. Thanks for the great vid and keep making sharp things fun and enjoyable.

Okay so here is my thing. I cannot freehand forwards to save my life. However, I have learned how to strop by hand and I'm able to hold the exact same angle doing so. I have a DLT ultimate 4 sided strop 8x2 three sides are covered in leather hardwood. On each end there are pieces of wood that I can unscrew with a butterfly nut. Designed to hold strips of sandpaper that are 8 by 2s and by sharpening edge trailing for stropping strokes. I can achieve killer edges and hold my angle doing so. And then I followed up on 6 CBN strops. 16, 8, 4, 2, 1, and .5 micron for a mirror edge. But my sandpaper progression is 400, 600, 1000, 1500, 2000, 2500 before I use the CBN strops. I don't know why it works it just does. I know you said in one of your videos you don't recommend Sharpening backwards and I don't understand why because that's essentially what I do with the sandpaper. And it works. Sorry this is so long I'm just trying to learn everything I can.

Great summary, but I will disagree about the inability to achieve a semi-convex on a fixed angle system. There are a couple ways to go about it. One is to simply clamp the stone at a slight angle. Another method is to use a curved rod, which are available for some systems.

Ceramic usually are 2k plus usually 2500 to 5k grit, there's more aggressive ones like the medium from spyderco which is like 1200. But usually Ceramic are around 2k plus. The problem using them on work sharp is it's to big of a jump you need multiple stones between the last stone and the Ceramic to get the most out of it

I’m decent free hand sharpening but it’s not like I can perfectly set my bevels to specific angles. I especially have issues when a knife comes with poor factory bevels or if I screw one up. I plan to get a hapstone rs. I will still freehand for quick touchups and stuff and to keep my skills. Sharpening isn’t really a hobby of mine, so I’ll never put the time in to reach the level of consistency that id like. I also feel like I end up oversharpening by the time I get a near whittling edge with consistent bevels.

I suck at sharpening knives freehand. I've been doing it for almost 30yrs on just about any stone you can think of. I can get a sharp edge but not razor sharp. I must have developed a flaw in my technique. Always one side ends up better than the other. It really makes me feel like a failure.The best I can do is maintain the factory edge with ceramic rods and a strop.

Same. Watch all of Jared's sharpening videos and something will click. I bought decent diamond stones and use his tips to keep a consistent angle. Much improved. I prefer to keep the factory edge as long as possible.

Make sure you have diamond plates always start with a low grit like 300 or less, you can get an angle finder If needed like the one I showed in the beginning of video, watch a few of my vids I show some awesome tricks to getting great edges

It took me many, many years and dozens of "stones" to learn freehand sharpening and I'm pretty decent at it now. Muscle memory is key and maintaining the angle. But I can get hairsplitting results these days.

Which fixed angle system is your favorite? I have a kme and while it's ok I wouldn't mind upgrade to something that can use bigger stones. Also, what diamond plates do you recommend for beginner freehand?

The only diamond stones I will ever buy (also currently use) are Venev diamond stones. Venev Industrial Diamond stones, and bonded diamonds are preferred over coated diamonds. Unlike coated diamonds, bonded diamonds spread the diamond grains over their whole volume, and work in similar fashion to conventional abrasives. Only bonded diamonds can be flattened, lapped, repaired or refreshed. Bonded diamonds are universal and able to sharpen any steel and they have much better feedback and a longer lifespan in general (when taken care of/maintained properly). This is your destiny; let the stones be with you.

Hello Jerad, I don't what to choose and buy to sharp my knives, one is the fixed angle Work Sharp system but I don't know with how many stones it cames.The second is the electric Ken Onion Work Sharp with different belts, but I'm scred this belts eats the blade steel so fast. The third variant is to buy 1000-3000 grit stone. Give me an advice please.

I modify the blades of the knives by planing the blades, in my videos I show how the knives become sharp, to sharpen I use a much more effective technique than stones which makes the blades as sharp as razor blades. and I have the sharpest knives in the world.

I would have to check it out to see what you mean, sounds like a zero grind which is the sharpest, however it's not as practical for edc use for many reasons, however it can be dependent on the geometry etc.. but I'm not sure if that's what you are talking about

@@NeevesKnives you can try with an old knife, you have to grind the blade that ends at zero and remove the bevel which becomes like the razor blade which is at zero, to sharpen it you have to do it as you do with a flat blade razor on a sharpener and slide without tilting it otherwise you take it off instead of sharpening it. try it and see that you have a knife handle and a cutter blade. 👍

I have a shapton 220grid and a fallkniven dc521 after 5 sharpenings I got it in my hand and the blades are quite sharp and I can cut through a paper towel (not perfect but i working on it )

Free hand you gotta have a skill to do it and know when to move to the next stone and but mainly patience and skill Guided system you just clamp it on and put some sharpie and see which angle goes but also you can’t bring this giant system with you to the woods or camping in the bush

the work sharp comes with everything you need to start sharpening with there supplies, however the system from hapstone is better because it allows you to use any stones you want

What fixed angle sharpener would you recommend for someone who’s just getting into sharpening? I free hand, but people ask me all the time what kind of sharpener I use, and when I tell them I free hand they say they can’t do it and proceed to ask what kind of fixed angle sharpener I would recommend, and I have no idea.

If I could choose between getting 3 knives (not necessarily expensive ones) vs getting a professional sharpener, I'd learn to sharpen free hand, because I'm not a collector, and I won't investment in a professional sharpener just for 3 maybe 5 knives that I don't care about ruining, just getting them in working condition!

​@@NeevesKnives Right now I'm comfortable holding the stone In my hand, and I find it easier to move the stone and slightly tilt it, to accommodate the edge shape when going to the tip, instead of moving the hand with the knife!

Why I only see people sharpen pocket knives with these expensive tsprofs and other systems? Why nobody is sharpening 8 inch chef knifes? Are these systems not ideal for kitchen chef knives?
