Family Night ~ Spicy Chicken Sandwiches, Frito Corn Salad, Spicy Mayo

Family dinner night! join us tonight for spicy Chicken Sandwhiches and Frito Corn Salad. 2 wonderful things tonight: Food & fanily.
I hope you all enjoy the southern farm and ministry culture that our lives revolve around.
Spicy Chicken Sandwhich
Marinade:
1 cup buttermilk
2 tsp paprika
1 tsp garlic powder
1 tsp pepper
1 tsp salt
marinate chicken breast anywhere from 1 hour to 24 hours (The longer the better).
Breading:
1 cup ap flour
1/2 cup corn starch
1 Tbls paprika
1 Tbls garlic powder
1 Tbls onion powder
1 Tbls Cayenne
1 tsp salt
1 tsp pepper
fry for 5 minutes on each side
Spicy Mayo:
1 cup mayo
2 Tbls (more or less) Sriracha or hot sauce
2 tsp garlic powder

I lost my Mama on the 27th of March. She brought me into this world on that day and I brought my daughter into the world that day as well. I miss her so much! She’s home and was blessed with 91 years. Emergency surgery. She live till the day she passed. That was her wish. God was fond of her. Gods so good

Leslie. Thank you for your kindness....your compassion. This is the worst time of my life. 53 years....I thought we had a few more...I knew he was sick, but, never thought that "this" would be the day. God was good to me that it all happened when I drove up in the driveway....and I wasn't left to wonder how long he had lain there...that would've tormented me. Thank you for your prayers. I do love you! With The help and strength of Jesus....I will be up and running soon! Apron Strings will be my safe place.....where I can meet with friends doing what I love to do....cook, garden, play the piano, and sew!!!! Oh, and TALK!!!

Losing your husband is so difficult. I lost mine at 50 & still had an 11 year old, really adding a layer of issues. I will remember these ladies, prayer is by far the most helpful thing to do! I will have to try the salad, it looks awesome! I would have to leave off all the spice or skip the chicken, my system can't handle it but it looked very good!

You can save a lot of money by marinating the chicken in a Ziploc type bag (you don't need nearly as much buttermilk) and by putting the seasoning in a shaker jar instead of in the flour. That way you can season the chicken directly, and only use a fraction of the spices. Most of it will get thrown away if it's in the flour because you'll have to discard it. Put your chicken on a rack over a sheet pan and finish it in the oven. That way it will stay hot as well as finish cooking! You can loosely drape some foil over the top if it's getting too brown.

I love corn 🌽salad I add green onions and I cup of sour cream cup of mayo and a small can of green chilies but never thought about adding crushed corn chips sounds delicious, prayers for Mrs.Gaye and others that are in need of prayers 🙏🏻🙏🏻

Bryant, I'm with you. I don't do any spicy food. I don't think he's a wimp. I've seen him tasting things that I would call spicy and he said it was good. So interesting! I got that corn salad recipe a long time ago from Paula Deen. I don’t always put the chili Fritos in in as we love to eat it with plain scoops like a dip. The chicken looked really good.

Hi Leslie! I’m so sorry to hear that this sweet lady lost her husband. My prayers are with both of the ladies. Your meal looked delicious. Though I am right in there with Bryant. I really can’t handle spicy food. I end up having an asthma attack when I eat something spicy. Thank you for sharing your meal prep with us. I love your videos my friend! Have a blessed rest of your week. And if you would please pray for my husband. He came down suddenly with a urinary tract infection this past Thursday evening. I had to take him to a walk in clinic Saturday. He didn’t want to go to the ER. They were able to take a urine sample and get it tested. They prescribed a weak antibiotic and called today and said it would not do the job, that his kind of UTI was resistant to that particular antibiotic. John had called his doctor this morning. His doctor got right on this and prescribed him a 14 day regimen of a much stronger antibiotic and wants to see him Friday. He said he wants to see him because most men don’t ever get UTI’s. I’ve had several myself since last September. I told John he didn’t have to get one just to see what it feels like. But believe me he has been much sicker then me with it. He was running a temp. It wasn’t too high though, thank the Lord. The doctor on Saturday told me to watch him because a UTI in a man is much worse then in a woman and can escalate in a hurry. So I went to Sunday morning Bible study to teach my class yesterday and then came home to keep an eye on John after Bible study was over. We watched our service on Facebook after I got home. This stronger antibiotic seems to be helping. I know the Lord is in control. I just have a hard time seeing my hubby sick. I’m not use to him being down. So if you could pray for John I would appreciate it so much. Thank you again for all of your wonderful videos. I’m so thankful I get to spend a little bit of time with you each week. Oh no! I know about Stephanie’s husband, Timmie. I’ve been saying many prayers for her and her family. But I did not know that Mrs. Gays husband passed also.😢 Come to think of it I haven’t had any notifications from her page. I’ll have to go check it out after this video. Stephanie from little blessed nest is a fellow Ky girl. She’s on the western part of the state and I’m eastern! She’s a sweetie!! Loved listening to her husband Timmy sing! Prayers for your friend. I’m with you and don’t even want to think of when that time comes. I have got to have a talk with hubby this evening about next weeks dinners. I definitely want the chicken meal and I want the blackened shrimp but not as much garlic. I like garlic but not a lot lol I think I’m more excited about dipping the bread. Now if he’ll agree with me in making this. I was thinking of doing the chicken Labor Day but that’s a little more work than I want to do 3 days before we leave for Myrtle Beach. May just do chicken on the grill that day and the corn salad. Then leftovers on Tuesday and just grab something out on Wednesday and no clean up and out the door very early Thursday lol Gonna work upstairs on my clothes away from the kitchen because I want food and I’ve already had my lunch lol It would not do for us to be neighbors lol I’d gain all the weight back I’ve lost so far lol

I LOVE that frito salad!! Being from the midwest I've never had persimmons. I'll have to try your chicken. I can't make chicken ever and not have it tough and chewy. Thanks for all of your sharing!!
