Sunday Dinner Pot Roast - The Hillbilly Kitchen. Learn how to make a perfect tender pot roast every time even with the least expensive cut of roast and learn how to make a smooth brown gravy right in the pot.
Making this iconic Sunday Dinner isn’t difficult but it does take some time and a little love. You can customize all of the ingredients to perfectly suit your tastes. It is the ultimate one pot meal when you add carrots and potatoes to the pot or you can serve your roast as the main course of an elegant dinner.
This recipe will work with any beef roast. You can use any carrots and potatoes, but the baby carrots and new potatoes taste better, look good and cut down on preparation time and effort. I usually prepare 8 ounces of beef per person, and 6 ounces of carrots and 6 ounces of potatoes per person (per-cooked weight).

Roast
Carrots
Potatoes
Water as needed
1 tablespoon Corn Starch per cup of liquid
Optional Seasonings:
Onion
Peppers
Garlic
Worcestershire Sauce
Mushrooms
Celery
Salt & Pepper

I can still remember Mama's pot -roast. She worked full time, so she always cooked it in a crock pot. I remember watching her sear the meat in a cast iron skillet that she had used for one thing or another for years (she seared it on all sides - she was thorough like that), placing it along with the vegetables into the crock pot, setting it on High while she got us together for school ( It was kind of like herding cats, tbh), then reset the level to low just before walking out the door. I remember getting home from school - walking through the door and the scent of an amazing meal to come filing the house, and my mouth watering at the thought of the amazing meal to come that evening. Mama's gone now, but memories like this one just bring her right here with me - bless you for bringing this, as well as so many other precious memories to mind, as you've done that for me so often with your recipe videos. You're a very special person, and don't you dare doubt or forget that!! 💗

My memory was dad's, haha. We were always given or had deer laying around, so we had venison potroast at least twice a month! At the time it was so common I took it for granted, now I'd give everything just to sit down to potroast with dad one more time.

Growing up, we either had a beef or pork roast, at least once or twice a month, mostly twice a month, because it would feed a large family, plus there was always enough leftover for a meal the next day, or sandwiches. My mom browned her roast on the stove top, and slow roast it in the oven, and before serving mom would add the carrots and potatoes. The good old days.

Yes, my mom did it in a roasting pan in the oven. I sear the meat in a cast iron skillet on all sites and then put all the ingredients in a crock pot which is a lot easier and pretty foolproof.

My mom has been using the same electric deep pan to cook roasts and steaks because it is easier to use and clean. She has all the other pots and pans but prefers to use this one for most meals.

My Granny taught me how to cook a lot of the things you cook when I was growing up. When I got married I use to cook all the time but after a bad divorce I went into a deep depression years ago that I can't seem to shake! I only cook every once in a while but not nothing like I want to. I so much wanna start back cooking for my grown daughters, grandkids and their families. I pray I can get back at it one day soon! Thank you for sharing all these recipes and keeping God in your videos. I would really appreciate if you could say a prayer for me I'm really having a hard time right now with so many bad things happening not just with myself but issues with my house such as electrical problems and other things. I feel for you. I too have had a lot of set backs. My home also has an electrical issue that needs fixed, but I am a disabled RN and used to helping others, now I need help and prayers (like you). Have you thought about cooking for others as a profession? I know there are a lot of cooking videos on You Tube with lots of folks loving and following that (type) of videos. I pray the Lord will help (us all) by giving us some ideas of how to help others with limited funds. Maybe volunteering at a Soup Kitchen feeding the homeless / hungry or something like that will bring you blessings as well. Hope you all are having a Great Weekend and Safe Upcoming Holiday Season!

I use chuck roast for pot roast almost exclusively. The fat and connective tissue just add so much flavor. Chuck is cheap as well compared to a rib roast. Love your vids! 👍

What a blessing to have found your channel! I attended a Culinary Arts college right after Highschool and have worked for a large fortune 500 corporation bouncing back and forth between the Executive dinning room, the huge commissary kitchen or filling in at a station eg" the lunch grill, the steam tables, re stocking the salad bar; & my least favorite place the cash registers. Because the main HQ for my company is spread out all over the city ( the 4th largest city in NY State, all the food except anything special we serve in the executive dinning rooms come s from 2 commissary kitchens and is on a 5 week rotating menu that changes side dishes to take advantage of seasonal fruits and veggies. Doing this for the1last 20 years using a standardized menu rotation leaves us Chefs with little to no room for creativity? it the exception of when we unexpectedly run out of something and are forced to substitute. So I've lost so many basic skills needed to cook for my own family of 4 kids in various places in their teens and my husband. Add in that my husband and i are both 1st generation Italians born in America. So I've been loving your channel and have been binge watching it to pick up so many basic skills I've not used in years. I have also been adding 1 of your recipes for our weekend dinners like meat loaf that I can get several meals out of by making sandwiches. Most of my efforts have been appreciated by the kids. As I was told that we are eating more "normal stuff". So a big old " "bless your heart " from an upstate NY Chef who is greatful for sharpening up some very important forgotten basics and a bit less " are we having sauce again ?" from the kids. and more of can you make fried chicken again,?

I live north of Toronto but work down there and I feel seriously blessed that I can work from home and not have to be in the City with the case count so high. We always had a delicious Sunday Pot Roast on most Sundays. My mom would start it covered in the oven and then we went to church. When we got home from church and walked into the house that smell was heavenly. Then we would set the table, and make the gravy, potatoes however dad wanted them that day, often mashed. Thank you for explaining to younger generations how that wonderful roast was made.

Bell pepper is such a strong flavor, it always takes over the pot so I don't use them, but the rest I like!

Mom used to take leftover pot roast cut up with leftover gravy and more vegetables(potatoes onions carrots) a little Worchestershire sauce and maybe some mushrooms!! Let it simmer awhile and serve hot with rolls, biscuits, or cornbread!! She called it "hash" even though it was more like a stew! So good served with biscuits or cornbread!! Thanks for posting!!!

Becky, I love this! Such a Great Idea to have Pot Roast at Christmas time. Gets you out of the kitchen for hours/days with Turkey, Dressing and all the fixings or Same with Ham, Dressing and all the fixings. Hii Becky. I loved mom's pot roast. The left overs were almost better than before. Mom used Crisco that she would heat up in a heavy skillet. She added the potatoes and started browning them. She added any leftover carrots and onions, and meat a few minutes later. After everything was hot, she would crack farm fresh eggs over the top and cover. Oh that was so good. I always cook my roast in my 10qt Pressure Cooker. An old fashioned Pressure cooker not one of these silly instapot things everyone uses now days.

My grandma taught me how to cook a pot roast, along with mama, they both did it the same of coarse, since she also taught my mama as well. She did it like you, with "browning" it on each side before she put it in her Pot. She liked using her oven to cook hers. Hers always turned out so tasty and I love it and miss her so much!

I made this recipe exactly as you described it and it turned out beautifully! I have NEVER had any luck with cooking a beef roast in the oven, crock pot, or in the Instant Pot. They always come out tough and dry, regardless of how much liquid I added or how slow I cooked them. I had given up until I saw this video -- I've never seen a roast cooked on the stove top before and thought I'd give it one more try using your method. I was a little nervous about it, especially with NOT using any beef broth or such for additional seasoning. But, I finally found the way to cook a beef roast that works for me! It was juicy, fall-apart tender, and perfectly seasoned. I cannot thank you enough for sharing this recipe. Hubby and I are so happy to have beef roast on the menu again!

Becky, You made a beautiful Pot Roast and thats exactly how I cook mine! My Grandmaw always cooked the best Pot Roast and the flavor of the peppers in it was the best! I cook mine like she did but hers was still always best tasting bc she was my Grandmaw n she had that grandmaw love in it. She'd always make homemade Biscuits with hers n we'd sop the gravy up with our biscuits and Lord have mercy, I never wanted to get full...I love to have that flavor every meal...Thank you hun for this beautiful Pot Roast Sunday Dinner! Brings back memories of my mother's roast dinners. Potatoes, carrots, celery, onion were cooked alone with the roast; always bay leaf to season! Mom had some very nice high quality steel pots and pans, so her roast was always prepared on the stove top.

Becky, my granny was from Kentucky and grandpa from Tennessee. They didn't met until both families moved to Eastern Washington state. This pot roast is exactly what we had for early dinner every Sunday when I was growing up. ❤ it has always been my favorite meal. I don't know if she made it on the stove or in the oven. She had rolls and red JELLO with fruit cocktail too. Sundays were also special with waffles for breakfast. Thank you for the sweet memories this brought me. This brought back good memories and Sunday (not every Sunday) was the day that the roast and all was cooked. My Dad prepared this meal and it was put in the oven, in a roaster, before we went to Sunday School...4 hrs later, when we came home, the house was filled with the aroma of the meal...Mom would make the gravy and supper was on the table.

Its amazing the number of people who ask on quora 'how do I make mac&cheese from scratch? Basic cooking is something we as parents should be teaching our kids, how to live without take-out and using what you have, finding an alternatives if they dont have the exact ingredients having them watch you cook like these videos are very important if you haven't been able to teach

mom always cooked a big chuck roast, in a turkey roasting pan, on top of the stove. the water covered the roast, medium heat. taters were quartered white Irish potatoes, scraped carrots broken in half, several yellow onions cut in half all at the same time. cover with lid about 2-1/2 hours til meat tender. After taking the meat and vege's out she would bring the juices up to a boil and pour in a 1lb. bag of egg noodles. Yumm! The pasta starch made the gravy. I also knew a large family who traveled often from an Army base in Texas to somewhere up north, not Canada. They would start out in the wee hours of the morning. I guess they traveled 8-10 hours. Before they left home they filled a roasting pan with all the stuff my mama did. wired the lid on, nestled and wired the pan in the engine compartment of their big old station wagon and took off. about mid-day the roast was done. Fed the whole hulking family of 8 on the side of the road maybe at a rest stop. Somebody was smart! no coolers to pack, definitely not eating at a restaurant. Made sun tea on the dashboard 2 gallon jars cushioned with towels. We had a small family just my sister and I, but with neighbors like that, never a dull moment.

I love your practical tips. I was taught to season an flour the meat then sear.. I love making a gravy using the corn starch.. You’ve inspired me to prepare a roast. My mother in law lived w us while in late stage of cancer .. so the roast was something she loved and baked 2x’s a week at least .. she passed away 10 yrs ago and been hard for me to gear up to make 1 .. my husband LOVES pot roast as he enjoyed them w her.. I used my Cast iron Dutch oven on stove top.. Thanks again my dear.. I’m southern breed and raised.. lol., your recipes are bringing back some awesome memories .. and some techniques that I was taught.. my mother has been gone 20yrs and was a wonderful cook .. I miss her greatly..

A Chuck roast is my favorite because it has so much flavor. Years ago, my mom would buy a 7-bone roast. I have not been able to find that cut of meat. Any kind of bone-in cut of meat has more flavor than boneless.

7-bone Roast! Thank You for jarring my memory! My mother-in-law used those when she made pot roast ('70's in the Permian Basin of West Texas). I do not find such either today. If I recall correctly, the cut looked like a chuck roast with pieces of bone along one side.

I've never heard of using a London Broil for pot roast. We actually broil or grill it, medium rare, then slice it thin across the grain and it's delicious and tender.

Don’t know how old this is but I watched or rather listened to it while I prepped a boneless chuck roast to cook a little later today. What a joy it was to listen as you talked about your family and I can only imagine e how much pressure you are under for that clan that comes for Christmas dinner😁 reminds me of my childhood when we would gather at one of my aunts and uncles home. My mother was an amazing cook ..... Mother was raised on a farm, 1 of 11 children plus every day they cooked 3 meals for a dozen farm hands who ate with the family at a huge table. Our family heritage is German but mother wasn't keen on vinegar or beer... sour was not soothing to her palette. When she cooked she didn't want any of us in the kitchen... it was HER quiet time, cooking love into the meals she prepared for us. Mother's pot roast was a meal I really miss and I actually crave from time to time.... especially the texture and flavor of the meat. The meat fell apart in strips..... and oh, it tasted so delicious dipped in catsup!! The potatoes and carrots and celery melted in the mouth! Great memories you've stirred up for me, Becky... I just wish I knew the CUT of meat that she used.....

Great video’s! Love all the tips!! You know my Granny use to put a beef roast about the size you have there and a pork roast same size and put it in a medium sized roaster with water about not quite half full, put her seasonings, cut up potatoes, carrots, onions quartered, and put the lid on and put it in the oven for 3-4 hrs, and when the meat was tender she’d pour out the remaining juice in a pan and thicken it to gravy. There is something about the flavor of the beef and pork together made best tasting gravy. Miss my Granny!!

Great video, great instructions, and the food looks not only delicious, but beautiful. I just have to say this, since I shoot from the hip. If any of my family complained about the food that was just as delicious because they "saw" it being made in a different type pot, cooking instrument, stove, whatever, then next year we'll be having dinner at their house. My family knows better because not one of them have ever offered to have holiday dinner at their house. Next time tell them you're on dinner vacation. 😋

I like watching your videos. You explain things well. I've actually made some of your apple pie fritters. The hubby loved them. I like my roast in a Dutch oven. Seared, add onions carrots& potatoes and seasoning to brown up a tad in the fat, Remove the potatoes and carrots, slow roast the meat for a couple hours in the oven on 325,add the veg back in with a little water to finish it off. Adds a layer of flavor to the veggies. I remove all and thicken the pan gravy. Pour gravy all over the finished roast and potatoes. I always get that what did you do to get the potatoes and carrots to get that flavor comment. It's they way mom taught me, and her mom taught her. Nothing better than a caramelized flavor on a pot roast and veggies.

It made me smile when you said that your biggest pots wouldn’t be big enough for holiday pot roasts. I have one of those huge electric turkey roasters that I guess holds about 6 gallons. When I make pot roast for company, the removable inner pan is my pot. I sear the meats, (usually 2-3 largish roasts)in skillets and transfer them to the roaster pan, then I have to either put it all in the oven, or use two burners under it. It takes longer in the oven, but frees up the stove top for making sides. I’m thinking about adding mushrooms to my next small pot roast, just because we love mushrooms.

Love all your videos. You remind me of how i grew up. My best memories too. I feel like we are kindred spirits , By that i mean i believe in the same way you do. And love the sciptures you quote at the end of each of your videos. You are really Blessed .thank-you for all you share. I enjoy them so much. Everything you cook my mom and grandma use to make in the past. Now i make them. But there is nothing like mamas cookin. AMEN.

Awesome. As a professional freight relocation engineer ( truck driver ). My wife will break out the crockpot about 0800 in the am and start cooking the roast (low and slow) and throughout the day she will add ingredients. B4 it is done , she will breakout the rice steamer and make a pot of rice . OMG. We eat about 6 pm. I have learned that we go shower first and then get back to truck to eat cause I don't want to do anything after I stuff my self. Lol

Becky I love pot roast and only made it once that it came out after that i tried it a few times and my kids were not happy at all.but with this recipe it showed me what i did wrong love all the tips it really helps and I love the scriptures at the end. many Thanks and God Bless Kathy
