Wow, those are some big sweet taters!!! The veins bulging on the taters look like the varicose veins in my legs!!😘 That's a very nice yield on the tater crop! Your kids tickle me going barefoot in cold weather! I'm sitting here inside and my feet are frozen! Meg, I was so hapoy your mom came out to visit! Bet you hated seeing her leave. Ummm those roasted beets are delicious. Sometimes I roast a big pan of root veggies (beets, both kinds of potatoes, carrots and onions. Just drizzle with olive oil and season with Italian herbs, salt and pepper. Delicious!!! So glad you're back to doing videos...I missed you!😘

I'm in agreement with all the other viewers who love your family! You're amazing and I can't help but smile when I see Little Miss Buggie. That child is beautiful and adorable....but then, your boys are good looking young men as well. More importantly, is the two of you have managed to bring a family into a world where so many others struggle just to stay under the same roof and treat one another with any measure of respect. You obviously love and respect one another. I pray God will continue to bless you all and help you prosper so that you can honor Him in all you do.

Love watching your channel and especially when the kids come out to help. It’s nice to see the boys coming out of their shell and speaking a little more on camera. Buggy is so adorable and she hangs right in there with her big brothers.

As long as the smaller ones are not too small, Meg can wash good and peel them and can them or cook and measure out into plastic freezer bags and freeze......I measure out 3 cups cooked for 1 sweet potato souffle or 3 sweet potato pies.....makes cooking just a little bit easier...enjoy all your videos

Y’all are definitely my favorite KZfaq channel the way y’all work together eat together and pray the blessing before you eat such a Beautiful and wholesome family. I can watch you with my grandchildren and not have to worry about cursing or drama. That clump that had the four sweet potatoes together, almost looks like a cow’s utter! Buggy is sooo cute! I love your family. You are so blessed. Thank you for letting us hear your dinner prayer. I am a widow and now live alone except for house cats and a house hen. I have stopped going through the ritual of sitting down to dinner. You have inspired me. Maybe it’s time to return to the table and eat like a civilized person again. Maybe ask God to join me in a dinner conversation. Most of my conversations are with the cats or the hen. Oddly enough the chicken is the one who actually engages in conversations. She acts like she understands what I am saying and she talks back in an appropriate manner. I am starting to suspect that chickens are much smarter than people think they are. She actually knows what sounds her favorite food treats wrappers make and she can on the other side of the house, and I go into my bedroom and try to sneak a treat for myself, and she comes running into my room and attacks me to get a bite of my treat. Even if I don’t buy that food item for a month or two when I do buy it again, she remembers the sound of the wrapper. When I try to put her outside she will stand on the back steps and knock at the kitchen door until I let her in, and if I stick to my guns and don’t let her in, she eventually will go to the cat entrance to the basement and come up the basement stairs and start knocking at the door in the hallway. Of course I always relent and let her in. Except when she decides to chase the cats, she’s a very peaceful chicken. At least that’s what I always thought until a couple of months ago when in the middle of the night, a woman drug addict broke into my house and was trying to go through my bathroom medicine cabinet looking for something to get high on. I’m afraid she was more than disappointed by the lack of anything Narcotic. I woke up to the sound of the chickens screeching to high heaven. My very first thoughts were oh it sounds like the cats finally grew a pair, and are fighting back. I got up to go rescue the cat and discovered instead that the chicken was attacking the woman in my bathroom. The woman was trying to cover her eyes with her hands while the chicken has latched onto her wrists and was packing her on the floor head relentlessly. do you know how in just a few seconds a dozen thoughts can run through your head? This was my list of thoughts. Who is that woman? And how did she get in my house? Wow! Look at that chicken go!!! That looks just like a scene right out of an Alfred Hitchcock movie The Birds! Oh wow, the chicken knocked her right into the bathtub. 🤔 Hmmm The next scene in The Birds, the chicken has plucked out the eyeballs on the old man and he is dead. Maybe I better go rescue that woman before she loses her eyes and sues me! Our local police were more than happy to take the woman off my hands, since she evidently had a lot of warrants. The police were also quite impressed that the woman was subdued by a chicken! 😮 The best part is that word has gotten around the entire neighborhood, Don’t mess with that the old lady with the gun, she has an attack chicken who will pluck your eyeballs out!!! 😂I have not had any trouble since. My next door neighbors who raise pit bulls want to know if I can train an attack chicken for them. My chicken is scarier than their dogs 😂😂😂

Nice sweet potato harvest! The clay just makes it so difficult to dig any vegetable out. I had the same issues! 4 weeks after my sweet potato harvest, more sweet potatoes started growing. My sweet potato bed is loaded again with vines. I had left a few roots, and broken small pieces, and they took off growing. The frost will kill them off. I may try to dig a little just to see if anything formed.

I try to keep lots of home canned vegetable broth on hand and have found that adding a couple of handfuls of sweet potato peels to the veggie scraps in the stock pot makes the world's best tasting broth. Loved watching your family's joyful dig!

Guys I roast the beets then peel and cut put salt pepper red wine vinegar olive oil red onion and a sprinkle of oregano. Delicious

Try grating your beets and salt pepper and lemon juice on them, making a salad. It is the best way to eat them allowing it's earthy flavour to shine! Enjoy!

Hello from a Greek woman living in Romania. I would like you to try the beets, as we make them in Greece. Boil them or bake them in the oven, peel them, cut them into slices, melt garlic as much as we like, add salt, olive oil and red wine vinegar. You've never had such delicious beets before.

That is BEAUTIFUL red clay soil. Lots of manure and/or compost will gradually break down the "concreteness" over a few years, resulting in even more super-productive soil. Nice!

Nice haul!! My garden was abysmal this year so it's so gratifying seeing you all ankles deep in the dirt harvesting. I love that the boys are just as interested as well. Lilliana is developing such a great vocabulary. She's learning so much being in the middle of all the work around the homestead and in the kitchen with Mom. You all work so hard you must just crash at the end of the day. It must feel so gratifying though. I can't wait until I can be doing all the things too.

Another delicious way with roasted beets is to infuse some cream with a clove of garlic, then pour hot over the beets and - most important, chopped fresh dill, black pepper and some salt. A Swedish recipe.

I cube sweet potatoes and white potatoes. I sauté onions with beef smoked sausage. Add the potatoes to the sausage and almost cover with chicken stock, place in the oven until the potatoes are tender and serve over cooked grits. A great, southern dish. You have enough potatoes for this dish “several” times!! Lol.

Another way to eat beets is with sesame oil and mirin. Make sure the beets are hot when you put this on them. It’s delicious

Pickled beetroot is a big thing in Australia. Sold in every supermarket in slices, diced or as whole baby beets. We eat it with salads, on burgers. I love them juiced or as you said roasted with sour cream on them.

Man! That's a great variety of sweet potatoes. You haven't got as much organic matter into that bed yet as you have in some, but those sweet potatoes just shoved their way into that heavy clay soil and GREW! I'm guessing some little magical child must have told them to *grow* and they said, alright, we'll do it!

It always surprises me how different weather conditions are.... Northern Ireland still hasnt has a frost yet and I'm much further north than you are in the Carolinas, it may be on part down to the Gulf Stream, part this mini heatwave we have going on, but for me frost is usually due by the end if the month... and I'm waiting on it so I can start roasting parsnips....

My mother-in-law cook beets med on stove top in water till fork tender. Then rubs the skin off then chops them bite-size with olive oil with lemon little bit of salt, raw onion, and she served cold like salad, which is what they do in Cyprus.

You need a spud bar, take it thru, pick up potatoes, go back thru again, pick up again, the third drag will get most all of them, so much faster and easier. I think I see sweet potato pie in your future! 🥧

The wood on the trailer, when weighing the potatoes on, I would suggest linseed oil ... the wood will last forever... the enlarge finger size sweet potato I peel and make mash potatoes
