ENSAYMADA

For the dough:
½ cup (120 mL) warm whole milk, about 110°F
1 Tablespoon instant yeast
2½ cups bread flour or all-purpose flour
4 egg yolks, at room temperature
¼ cup unsalted butter, melted and cooled
½ teaspoon salt
6 Tablespoons sugar
½ teaspoon vanilla extract
6 Tablespoons grated queso de bola or cheddar cheese
For the tablea filling:
1 tablet tablea, finely chopped
½ cup (120 mL) evaporated milk
¼ cup (60 mL) condensed milk
2 Tablespoons cornstarch
1 Tablespoon butter, salted or unsalted is fine
2 egg yolk, at room temperature
For the topping:
2 Tablespoons sugar
6 Tablespoons butter, softened
Grated cheese of choice, queso de bola, cheddar, or even parmesan

1 cup water
1 cup evaporated or whole milk**
1/8 to ¼ cup sugar, or more according to taste
