Ghana etew, Fante style banku, softest ever (made with fermented corn dough only, minus cassava dough). Will never harden over time, as per usual etew character 🤗! Simple technique I used will demonstrate how to achieve the softest banku/etew ever!
Fermented corn dough recipe:
Measure equal amounts white corn meal, and yellow corn meal. Add enough pater to form a dough. Mix well to ensure there are no dry spots. Cover top of Dough with a cling film and leave at room temperature to ferment over 7-10 days. Then portion into ziplock bags, label with date made, contents, and store in the freezer.

* 800 g or 4 cups fermented corn dough
* 1000 ml water + extra for steaming and softening
