One of the things I love about your channel aside from the recipes is how understanding you are at the possibility of people not having access to certain things. Some other channels is like "only use GOOD cheese" or "never use dried herbs" but like... that's the only thing people can buy sometimes, it's a bit annoying, my oven is old too so it doesn't have the fancy settings that the more expensive ones have. That's why I love your cooking channel the most, thank you.

YES! I live on a fixed income, and my oven is broken so I use an electric toaster oven. So far, I've been able to make all these recipes in that small oven since I'm only cooking for two. I use a lot of staples, like dried beans and rice, canned foods, and dried herbs. I love his simple but always delicious recipes, often with ingredients I keep on hand. I just bought zucchini because it's in season now and cheap. I also love the many helpful techniques I've learned from him, and I love hearing the names of these dishes in Spanish. Such a beautiful language, it sounds musical!

I think I'll turn my unused Matzos into crumbs for this recipe and call it a new Passover dish. Why not? The use of an oven rack for a zucchini drain rack, is such a good way to utilize what is available in the kitchen without going out and buying yet another thing. Every Friday, while at the market, I buy about five extra tomatoes, with anticipation for Monday's new recipe. I never dreamed that zucchini would be part of today's recipe.

My family makes something very similar. Each zucchini round is breaded then , pan fried, then transferred to a baking dish. The rest follows your recipe.Your way is easier. :)

This is an outrageous dish, I've already made it three times, hubby and I love love love it, and we have more zucchinis sitting in the fridge. I must confess, I'm addicted. Using the 5 Star Rating System, I have to give this zucchini recipe 10 Stars. PS: I no longer cook the zucchini, just bake it raw,. And sometimes I put raw pasta under the zucchini with a little veggie broth and bake it in pyrex with a glass cover. Increiblemente delicioso, from me and hubby here in Puerto Rico.

@@davidkilpatrick3317 Some of us love to grow zucchini. When our zucchini plants start producing zucchini, we call that time of year, "zucchini or courgette season." It is the time of year that our gardens or our neighbor's gardens are producing so many zucchini, that everything we make has zucchini in it. We make zucchini breads, cakes, pancakes, casseroles and sneak big bouquets of zucchini onto our neighbor's porches or at their back doors. It is April now, and the grocery stores do have some limp zucchini available. Those zucchini are about $3.99/lb Canadian and the produce comes from Mexico. So, when someone says that they cannot wait for "courgette season to come around," they are saying that now they have another recipe to try when their gardens are over producing.

I appreciate that you give both Metric and Standard measurements as well as Celsius and Farinheight oven temperatures. Sometimes I have to guess especially for the oven temperature.

Looks delish! I like that there’s no cheese, though I suppose if someone wanted to, it would be nice with a little grated cheese added to the breadcrumbs or sprinkled on just before the breadcrumbs.

I would have liked to have had this during Lent, but it will be available for next year, along with a lot of your other recipes. My son-in-law is (lacto-ovo) vegetarian, so I'll put him onto this recipe and, by extension, your channel.

WOW, hubby got some great zucchini today, and I just found this spectacularly promising Spain On A Fork recipe, it must be divine intervention. Gonna make it tomorrow with some alterations. I'm gonna dry out the cooked zucchini on a rack in a low-low heated toaster oven, instead of using paper towels. I'm gonna use the zucchini water to boil up thick-cut organic casarecce or gemnelli pasta to serve with the Southern Spain Zucchini. I'll be using canned diced tomatoes and mash-up as they cook. For bread crumbs, I'll be food-processing up a slice of organic multigrain bread, which should impart an interesting rib-sticking country-type flavor. Also, we'll grate fresh parmesan cheese over when we sit down to eat. Gonna look so inviting on my Fiestaware dishes, red for me, green for hubby. Hmm, maybe we'll finish up that bottle of red wine, which will add to the festive ambiance. Should be yummy. Fingers crossed. Beautiful days, and peace to all, now and everywhere. ------- (Retired with lots of time for culinary experiments).

Update: the zucchini dish was DELICIOUS! I made the whole recipe and baked in 9 x 13 pan and the two of us ate 3/4 of it. Will definitely make again. 😋

What is the purpose of putting oil on top of the breadcrumbs? If you want it to be for browning, why wouldn't you just spray the whole top of it instead of just lines of oil?
