My biggest question is - SIJ are supposed to be some of the most stable joints in the body, so if one is battling SIJ instability, wouldn’t adjustments and stretches like these with shearing forces to the SIJ promote further instability?

I agree, Pidgeon Pose and adjustment made mine worse. The channel CoreBalance promotes the idea that you should NOT adjust your SI joint if you have instability, as it will just make it worse.
