Merry Christmas and Happy New Year! Just when I thought you two couldn't be any more lovely, sweet, and heart warming then you make this blessed video! I loved the funny stories, the cozy cabin, and the song at the end. You know me I loved it all! The cabin seems so warm and inviting. A safe place to spend time together and be with our Lord. I had to play the video a second time, as I often do, close my eyes and just listen to you both. It was as if I were there with you enjoying all that coziness. No matter where our Lord takes you I will be there to support you. This video is a very special gift for Christmas. You both are a gift to me every day. In every prayer you are in it. Laura & Dan, I have really enjoyed watching the progress that you have made on your land. The quince recipes remind me of my childhood. My dad was raised on an apple farm in Arkansas. All the trees in our backyard were only fruit tress as he said no use watering & fertilizing trees unless they can you something back besides shade. We lived in Arizona, but he was able to find a quince apple tree to plant (I believe we must have had the only quince tree in Arizona). We also had an orange tree, grapefruit tree, tangerine, date palm, pomegranate tree, two varieties of plum trees & a grape arbor. Around most of the trees was a wide tree well that we planted vegetables like carrots, lettuce, radishes, peppers & tomatoes. My mom was always busy canning and baking something that we had grown in our own backyard. This early experience I think greatly influenced my desire to get my degree in horticulture when I went to college.

When I went from holland to live in Ecuador, it took me at least six years to stop doubting.

Buy a cast iron Dutch oven pot. Dig a hole. Put your cake in pot and cover place in hole and cover with hot Coles and dirt. Let bake then dig out. And you have cake.

Excellent job on the cooking/baking Laura! And nice to see tou guys able to chill out for a bit and hopefully not 'think' (to much) about other things that cant be changed at the moment.. Enjoy your time back home and worry about the other stuff when the tome comes to go back. Youve got a rough idea of what you want to happen, so as long as you're on top of any legal/logistical changes etc, then aside from that try to let things take their course. Id hoped to have move to Portugal too just after i first started following you couple years ago BUT unfortunately STILL stuck, (& now missed the market to sell and now all the requirements have changed just to add insult to injury! Now might not even be possible could also now end up losing everything shortly, just praying that i can somehow make things pan out)!? ..As you know yourselves, things rarely go to plan.. That was great - felt genuinely festive, what with the honemade garlands and baking etc. Christmas is so commercialised now with adverts for sales on Christmas Eve, adverts for sales on Christmas day and then all that crap on clearance sale on the 27th!
