I love watching your show! I can't cook to save my life, and Thai food is one of my faves. I don't get it too often since we'd go broke, and I heard there are so many ingredients that seem complicated.....but how you explain how to do stuff and the reasoning behind it, I feel like I can venture and try these! Just go to any Hindu Temple, they will give you the holy Tulsi (Holy Basil), you could find that almost in every Indian house in US as well.

I noticed you don't use a traditional Asian cleaver style knife for chopping meat or veg, any particular reason for this..? also when you say dark soy sauce do you mean kecap manis..? the Indonesian sweet thick black soy..?
