This trio of mushroom risotto is a winner for an autumnal dinner party! There are plenty of swaps you can make in this recipe, dependant on the time of year and seasonality of mushrooms. We used a mixture of shiitake, oyster mushrooms and girolles, but you could use any that you have at home!
