Many Romanians make tripe soup for the New Year's Eve, but also on other occasions. The tripe soup recipe is simple to make, with few ingredients. You can use fresh or frozen (precooked) beef tripe. Anyway, the fresh one is also boiled separately, beforehand, so pre-cooked belly will end up in the soup. Be sure to add some fine beef bones (with joints, cartilage, tendons, skin) that can be cooked in a pressure cooker or in a classic pot!
