Surprise! Bonus vintage recipe this month! Today I'm joining Anna at Cooking the Books in trying out a recipe from the 1962 Joys of Jell-O cookbook! This book is full of fascinating recipes I'd love to try out sometime, but for today's adventure, I decided on a Crown Jewel Dessert, or Broken Window Glass Cake. It's just so colorful and looks perfectly retro!
Watch how it turned out, then head over to Anna's channel to see how her dessert came out!

If you find a well-used cookbook/pamphlet, you'll notice that there are always modifications penciled in. The one modification I've noticed more than others is using extra unflavored gelatin in recipes like this, because more often than not, they simply were not firm enough on their own. Another major issue with getting jello to firm up: the package usually specifies an amount of time to stir the mixture. Always always always stir for that full amount of time, no matter how dissolved things might seem before then. And my mom and grandmother always said to never chill jello covered, you must leave it uncovered when you chill jello overnight. You can cover any leftovers after that.
@Maikoh
@Maikoh 2 жыл бұрын
Those are the best cookbooks! 😁 Unfortunately, the one I have is completely clean, lol. I did notice the recipe used less liquid in the jello than the boxes call for, but I think the huge amount of loose Dream Whip mixed into the lemon jello really just made everything too loose. I definitely want to give this another try, maybe using homemade whipped cream or even Cool Whip and maybe adding in some unflavored gelatin to the filling. Hmm, if the box said an amount of time to stir for, I totally missed it 😅 I DID chill everything uncovered though! Appreciate all the tips! Hopefully next time goes better!

I actually have this same recipe in my own old jello recipe book I have. The book I have is called JELL-O Classic Recipes and while I'm not too sure when the book was published, the copyrights in it are from the year 2002 so somewhere around then. These recipes are actually very similar, the only main difference I can see is that your recipe uses Dream Whip, my recipe uses Cool Whip. Which in my experience is a lot more firm then how Dream Whip looks to be.
@Maikoh

It’s definitely a classic! I’d never actually heard of Dream Whip before this recipe and was surprised to find it still existed, haha! I’m not entirely sure if Dream Whip was to blame, or just user error, but I’ll definitely be trying this again, maybe with Cool Whip lol 😂 Thanks so much for watching!! 🤗

I have this cookbook and love the pastel! I learned that I do not like Dream Whip, so I use Cool Whip instead. Real whipped cream gives it a weird texture. I also use a smidge less water because the Jello boxes aren't the same size as the recipe.

I have never heard of dream whipped. Now I’m going to have to look for it. I don’t think I have ever made a jello dessert like this. This came out looking way better than I would ever think a jello dessert could come out. Even though it did start melting . You made me laugh so hard 😂, when you explained this is not your idea of a fast dessert. I agree a jello dessert taking two days is not my idea of quick. I think also people used less water when people make molds, I only know because I’m older than you 😂 and my mom made them all the time.
@Maikoh
@Maikoh 2 жыл бұрын
Haha I was surprised to find out Dream a whip was still around, I’d never heard of it either 😂 I actually don’t think I’ve ever made jello, myself, either 🤔 I’ve mixed it into jam fillings to make them sturdier, or that jello poke cake I made last year, but don’t think I’ve ever made jello as it’s intended, like this 😂 It definitely looked pretty decent when it first came out of the mold, but was so disappointed with the Dream Whip topping and how the dessert itself was falling apart 🥲 Haha the recipe did actually use less liquid than the instructions on the box, but I think mixing in all that Dream Whip added way too much liquid back in

OMG! What on earth is Dream Whip? Awesome video and the cake is really gorgeous and the presentation is so impressive!! Even though you mentioned the stability was off it still looks so great! I bet if you baked a plain vanilla cake and cut it into chunks you could add that to the filling and it might help hold it together.

Hahah! Yeah I’m still not entirely sure what Dream Whip is 😂 Some kind of dried whipped cream substitute lol! I was surprised to find it still exists! The time I used Cool Whip failed because the pineapple juice causes the Cool Whip to break and then you've got a soggy, oily mess. Whip the Dream Whip until stiff, using a few tablespoons less of liquid.

Thank you!! I had such high hopes for this, it looked so pretty in the book! I just love the look of your video! YOU USED THE HAND MIXER! Perfection. I definitely had a similar experience shortly after I took mine out of the mold. It was SO soft and started to break down pretty quickly. No way could you take mine to an Easter dinner at Grandma's house. You'd end up with an orange puddle in your lap. There has to be something different about the ingredients today vs. 1963, right?? Can we ever trust Jell-O again?? Although our results were a little less than stable, I had a ton of fun with this collaboration! We should definitely plan another. Maybe not with Jell-O, lol.
@Maikoh
@Maikoh 2 жыл бұрын
Thank you!! Haha yess!! I actually got another mixer for this video, this one’s kind of a dull avocado green haha 😅 Oh noo! An orange puddle lol! Someone on Reddit mentioned to me that I needed to not beat the Dream Whip so much, that it should still be runny for the jello to be able to thicken properly 🤔 don’t think that applies to your problem though, idk, the proportions just seem way off to me lol! Hahaha, I was totally stressing about this until I heard you had issues with your recipe too 😅😂 What are you doing, Jell-O? Definitely such a fun collaboration though, would love to do something again!! 🤗😁

Love the vibe of your video. Production values remind me of early Julia Child, and your voice sounds just like a news/documentary show of the era. I'm old and I remember! I've made many a Jello recipe in my day. Do check the proportions. Packages today may look the same size but contain less product and more air inside than they used to! Don't be afraid to reduce the water, add a packet of unflavored gelatin, or both! Pineapple was used to loosen up the Jello because it inhibits the gelatin setting up. Sparingly use CANNED juice and maybe a bit of applesauce for part of the liquid in the creamy mixture. Dream Whip always was awful and personally I don't like Cool Whip much better. Whipped cream tastes best but may separate, so be sure to stabilize with MORE unflavored gelatin. And bake the crumb crust. Subscribed and looking forward to more.

Thank you!! Julia Child is definitely a huge inspiration for these videos for 60s-70s recipes! ♥️🤗 And I do my best to replicate the accents of the time haha 😂 I will definitely try that next time, the pineapple/Dream Whip mixture was definitely not firm enough, maybe less liquid and/or more gelatin will help!
