St. Louis barbecue, particularly St. Louis style ribs, are well known by barbecue aficionados. The grilled and saucy red St. Louis rib has made its way onto many menus across America, not just BBQ joints, I recall Boston Market offering a St. Louis rib at one point in my childhood. There are even some food historians that believe the barbecue rib was invented in St. Louis in the first place! I went to college in St. Louis so I was back visiting my alma mater for a few days, but I knew I could not leave St. Louis without trying and reviewing some St. Louis BBQ restaurants!
When it comes to the best BBQ in St. Louis, many will reference Pappy's in St. Louis as the best. St. Louis' Pappy's ribs are famous, and were even awarded the best ribs in America by I believe the Food Network! But I have been hearing many great things about Sugarfire Smoke House. The biggest BBQ chain in St. Louis, Sugarfire Smokehouse has been getting rave reviews ever since it opened in 2012. Many claim it is the best barbecue joint in St. Louis, even better than Pappy's! We will find out together if this St. Louis BBQ restaurant is all it's cracked up to be!

Never been to St.Louis but I lived in Central Texas for 38 years. I took Amtrack to Cincinnati with a stop in Chicago. The diner car had St. Louis style ribs. OMG was I blown away! The sauce (which I never touched before) was breathtakingly delicious. The Amtrack servers were rightly proud! Way to go St. Louis!

Missourian here. Sugarfire varies a LOT by location. If you're eating in St. Louis proper, it's quite good. The ones in the suburbs... not so much.

I totally disagree! The one in U. City? Olivette? (which is the original location) is marginally better than the one in St. Louis proper.

Good point. Some chains like In N Out make it their life's mission to maintain quality control but others...such as Flame Broiler is infamous for how inconsistent each franchise location is compared to the other. But then again they are actually different business models. You have one family owned corporation and one franchise owned by many owners.

I eat at sugar fire all the time; I used to be the personal trainer of the pit master when they first opened up years ago; he would always bring me burnt ends and ribs lol. Best customer ever.

@@uaeats I discovered your channel in July right after my dog died and I was just watching a lot of KZfaq trying to keep my mind busy. You were under 30k subscribers at the time. Keep what your doing up since I've became aware of your channel you've increases by almost 66% that should tell you that your work is paying off. It may take a while but you'll achieve your goal with this. Just stay focused and continue to polish your craft. Venturing out from your neck of the woods is key though so the fact you're doing that is awesome and I believe the key to your channel. I was aware of the Native American restaurant you went to in Denver but that was because I saw it featured on the travel channel maybe a decade ago. Everyone goes to the same places over and over expanding your viewers horizons I believe is a GREAT move on your part good luck

Yep, steak and pastrami tend to be good "safe" video topics for my channel, but I still want to mix things up here and there. Even if other topics don't get as many views (at least at first) I still want to showcase a diverse selection of cuisines. I want to use my platform to spread awareness of these foods and also prevent the channel from getting stale.

i really like Hill Country on 30 west 26th imo the BEST BBQ i had in NYC the DRY AGED BEEF SHOULDER is just insane highly recommend anything on the menu

Those ribs looked great. I agree, if the rib is good do you really need the sauce? While the ribs were tender, I remember Myron Nixon saying he does not want the meat to fall off the bone, literally. Meat closest to the bone is like the oil between a shrimp shell and the meat, full of flavor., You should have to gnaw the last shreds off the bone to really get the best of the rib, and those ribs looked perfect. I don't personally care for Southern eggy Mac and Cheese. Potato salad and coleslaw, or maybe collards would have been great. although brisket is Texas not Southern and perhaps need something different. People don't realize how far Southern culture penetrates the Mississippi valley. In Illinois, Springfield is more than half Southern, as is Indianapolis in Indiana.

Thanks for doing a video on stl bbq, sometimes can be forgotten on the bbq scene. I live in the metro east and while I’m usually not a fan of chain bbq, Sugarfire is consistent in their quality of bbq. Can’t wait for your video on Pappys

That’s my favorite part of the brisket it’s called the deckle it’s attached atop the very lean and usually dry flat part of the brisket the deckle has the fatty part of the brisket .

I currently live in Alexandria, VA but when I go back to the STL area I usually eat at SugarFire (I think at the location you visited). I love it too. Others like Pappy's, or Bogarts, or Adam's are good too but SugarFire is usually where I go. (Pappy's often has a long line.)

Thank you for the BBQ review. Personally, I as well, prefer eating ribs with no extra / added sauce after it is cooked. Just the seasonings, rubs, and flavors from the grill. Keep up the great work. I love your reviews.

They have a half dozen or so daily sides. They’re listed on the overhead hanging paper at the counter. The orange soda came from Excel, a local soda maker located on the Illinois side of the river. Ski soda is their most popular.

Yep, the smoke ring looks perfect on those ribs and the brisket. Sugarfire started out as one location, and yeah it’s a chain, but strictly local in the St Louis metro. The Lou has great food!😎

As a BBQ enthusiast and making BBQ for 40 years, in my opinion it’s necessary to have some fat for the right flavor and texture, but that had too much fat for me. My favorite BBQ joint so far is Arthur Bryant’s in KC. Great beef brisket and a unique funky BBQ sauce, brick orange, grainy with no sweetness which I just love!

Cornbread pudding *is* kinda weird. I grew up eating it, so now I'm craving it, but certainly understand why some people find it off-putting. I've seen it made both wetter and dryer than the stuff in the video.

On the east coast. You have to go to Monroe's bbq Jacksonville Florida off highway ave. Only open Monday through Friday 11am till 3pm.

Tim, have you tried John Brown BBQ in Long Island city? I’m by no means a bbq expert but I thought it was decent for the east coast. Let us know if you’ve tried it. It’s steps from queens borough station.

I live within walking distance of the biggest Sugarfire location in Wentzville, Missouri. We have several other BBQ places in town (Duke's, Old Town Smokehouse, Bandana's) and each is a bit different. Sugarfire's locations vary slightly based on what that particular owner and their main cook prefer. After eating at five of their locations, I can say that they're all great. While I suppose they do fit the criteria of being a chain, it doesn't feel the same as a mainstream chain.
