Great Big Story

Great Big Story

5 жыл бұрын

Made of 30% butter and 30% sugar, the Kouign-amann is pure pleasure. This divinely rich pastry comes from the coastal town of Douarnenez, France, where it was accidentally created in 1860 by a busy baker who had run out of pastries to sell. Quickly, he combined bread dough, butter and sugar, yielding what is now a quintessentially Breton treat. So go ahead. Treat yourself.

Honestly have no idea why people are freaking out about kouign amann when brownies are literally 40% sugar 30% butter then blondies are 50% sugar and 30% butter. In fact, American pastry in general has a tendency to have a sugar content of at least 35%. (I'm a pastry chef) inb4: people saying it depends yaddi-yaddi-yadda--well, to make these pastries the way they are traditionally made with the specific qualities that make it what it is (brownies/blondies being that crinkly top, gooey/fudgey quality, etc) well guess what--it requires a LOT of sugar. Protip if your brownies/blondies are failing to look instagrammable, it's most likely that you attempted to cut the sugar (or the recipe's author did, and the photo is a lie) so your batter doesn't have enough excess sugar to produce the crystallized top.

When I moved out of my parents place to go to college in Bretagne (the region the pastry in from) I was super sad and lonely so I would go back to Paris to see my parents every week end. On the Friday I decided to bring back a big box of mini Kouign-amann so my family could try them. At night before taking my train in the morning I decided I was gonna try one mini pastry as I never had them before. Blew my mind. Tried another one. And another one. At this point the box is half empty so I am like I can’t bring that back to my parents, I ll just buy another box tomorrow. I ended eating the 16 mini pastries that were in the box and felt so dead I coudnt move and take my train. Worst sugar high/ butter paralysis You can imagine. I don’t recommend. Don’t eat that much butter, it’s not good for you.

@TheGroundedCoffee
@TheGroundedCoffee 3 жыл бұрын
@@qwertyboo it's exactly like a croissant but between the layers of dough and butter there's also the sugar. The sugar will dissolve and caramelize which gives it its insanely rich flavour in combination with the butter. I've tried my hand on making it a couple of times but it's very hard to do. Imagine learning to make a proper croissant, being avarage with it and then add a whole new layer of difficulty. Needless to say I failed at least 3 times before I actually got it kind of right.

You'd be surprised how much health food we have here. It's just expensive, and our other option is home cooking which most people are too overworked to do for all their meals, so they rely on whatever's quickest and least expensive. Our economy is pretty much the root of the problem, I believe if healthy food was more accessible the obesity rate would go down dramatically. Most people want to get in shape and simply can't.

You guys don’t understand how underrated this pastry is! Its a flakey pastry with crusty edges, soft and moist on the inside from the butter and sugar. Kouign-amann is so good, i wouldnt recommend eating the whole pie but in quebec they sell it in pieces so you can appreciate the taste without getting food comma when you eat the entire pie!

Hi ! I'm actually from Brittany and spent most of my childhood there ! My grandmom used to live in Douarnenez so I know this location very well and often goes here when I come back to Brittany. I'm really proud of my Breton culture and I'm pretty happy to hearing about Douarnenez and Kouign Amann for a world wide audience. So that I would like write this comment raise awareness about the fact that Breton's culture is fairly different from French's one and how France has tried to erase our language and quirks for centuries. Therefore I'm slightly bitter when you talk about Kouign Amann being a "French" pastry or Douarnenez being in "Northern France" because in a way you validate the French's assimilation politic. Kouign-Amann is a must try if you come in Britanny, France. It's normally served hot , around 40 degrees celcius so the salted butter and the sugar are melting together. Most restaurant can also serve either Honey liquor (Chouchenn) or Pear liquor (Poiré) with the dessert. It's often tempting, when hungry, to order for a Kouign-Amann in a restaurant but beware of its density.

I think pewdiepie kinda revealed how sly these types of interviews are. He said the interviewer would trick you into giving an awkward laugh by asking a question that requires a lengthy answer, and then not responding with a blank face after you've answered. They do it on purpose because that laugh looks nice when edited in a video... idk
