Millet works well too. It’s very similar to bulgar wheat in terms of texture too. Does basically the same job. Just cook it first and it’ll be almost the same…

By the way, lemon juice, due to the presence of vitamin C, helps to better absorb the iron from lentils, so it's all about nutrition. I love this recipe

@@nehanaveli19 sweet in this case. The spicy one is called aci biber salcasi and it's used in other dishes like kisir. In this recipe, you're also adding pul biber (chilli flakes) separately.

A little-known fact (outside of countries that make these patties all the time): These patties are an excellent complement to tea or coffee (instead of pastry).

Hey Turkish person here and if you ever visit Turkey you can just order Çiğ Köfte and it will be vegan since our health department banned the sale of Çiğ Köfte that has meat in it a long time ago. I don’t know of a single place that sells Çiğ Köfte with actual meat in it. So don't worry about it and just enjoy your Çiğ Köfte

This is a really nice recipe and video, I will make these soon. I really enjoy your videos and recipes. We eat çiğ köfte all the time with pomegranate sauce and lemon together, and often wrapped in a lavash, which is basically a wheat tortilla. It's delicious, one of my favourite foods. We always buy at restaurants but I will make these on my own with this recipe. In Turkiye almost all çiğ köfte (say chee kof-tay) is vegan and is made like this recipe but with only bulgur (no lentils). You'll find small çiğ köfte restaurants or stands everywhere, always vegan, there are three within a block of my house! It's delicious, one of my favourite foods. It can also be bought pre-made at the market and will also always be vegan. You'll find it made with meat in some restaurants I'm told, but honestly I've never seen it made with meat in all the years I've been here. Çiğ means raw, so the meat will be uncooked, sort of like a Turkish version of steak tartare. Don't confuse it with köfte, which you'll see on many menus, and those are cooked meatballs made with meat. It's practically the national dish, probably on every restaurant menu in Turkiye.

Just found your channel and you upload a dish from my country. Miracle... Also most of the çiğköfte you will find in turkey is meatless, original recipe has meat but if they don't spesify by saying etli çiğköfte it is meatless

GLUTEN FREE OPTION 🌱 Use millet instead of bulgar wheat. It’s almost the same texture and flavour. Thing is that millet needs boiling, so basically add the millet to the water first and boil for 5 minutes, then add the drained red lentils, then carry on for the rest of the recipe… (including that standing time when he adds the bulgar). Enjoy gluten free! 😋

Just made this, with a few changes: Didn't have little gem lettuce, biber salçasi and pul biber, so I substituted romaine lettuce, ajvar and gochugaru (only 1,5 tsp, because it's hot and I've no idea whether pul biber is hot or not), and the result is delicious, but I think this dish would benefit immensely from a clove or two of garlic, or possibly some toum (which I'll be making next, as soon as I can get my hands on some more lemons). Thanks for a great recipe.

Thank you for this information. I have been totally plant-based for 5 years and my total cholesterol was 97. A few months later, I was losing my hair, had dry&rough skin, was always cold, had insomnia, was exhausted and felt awful. My cholesterol was 235 at that time. We prepare it in our home gluten free, using kinoa or millet! The recipe might change a little with these, give it a try.

I am Turkish. I can definitely say that 2 tablespoon of cummin is super much for this recipe. Use only 1 tablespoon.

super interested in making these, I don't have any bulgar wheat but do have a lot of coarse semolina. Could I use this, I suppose I need to be mindful of the water levels? I have a vegan nduja paste which is pepper heavy already and I think that could be an easy swap in too.

That might work but the coarse semolina will probably not cook in time if you just add it to the residue liquid of the lentils. So you’d need to adjust after

@@BakingHermann Thank you Hermann! Yes, I think that's right! I had a go at cooking something else that included lentils and added some semolina to adjust the amino acid profile (as you suggested above), and the semolina did take quite a while to cook. I could sieve the lentils, use the left over water from that and add to the semolina and adjust the volume as per the cooking instructions. I think I'll definitely find some bulgur though as I'd like to try and get this as authentic as you have.

Do you have a suggestion for an alternative to the red pepper paste? That paste is difficult to get where I live. Or do you have a recipe for how to make it? Getting tomato paste is not a problem. Can I add extra tomato paste in place of the red pepper paste? Thanks.

Koftas is not a turkish word. It was borrowed during the Ottoman empire from the south asia and it doesn't mean meatballs.

This idea of a "complete protein" has been so heavily advertised by special interest groups, such as the meat and dairy industries, that the average person believes he must eat meat (or at least milk and eggs if a "vegetarian") or at the very least prepare protein combinations such as grains and beans or take protein supplements in order to get enough high-quality protein. All of these beliefs are false and. in fact, may lead to practices which increase the toxicity in the body. This is an important concept in understanding protein needs: It is not necessary for all eight of the essential amino acids to be present in one food or even within one meal in order to obtain our full protein needs. As we have discussed, the body has its own amino acid pool to draw from to supply amino acids which may be missing from dietary sources. Needed amino acids may be withdrawn from those already in circulation, or the necessary amino acids may be released by the liver or other cells into the circulatory system. The amino acid pool thus acts as the supplier of the essential amino acids missing from incomplete proteins. This fact is proven by observing patients after lengthy fasts who exhibited not a protein deficiency, but a restored protein balance. Only the carnivorous animals in nature eat "complete proteins." Most of the vegetarian animals eat grass, tubers, fruits, grains, etc. and often of a limited variety. Yet they never exhibit signs of protein deficiency. In fact, protein poisoning from eating high-protein foods is far more common among Western man than is protein deficiency. The "complete protein" idea also falls apart if we realise that the amino acids in many of the so-called complete protein foods cannot even be fully used by the body. Meat as eaten, for example, is usually only the muscle meat of the animal, which is particularly low in some of the essential amino acids. The soybean has an anti-enzyme factor which blocks or inhibits the assimilation of some of its essential amino acids. Proteins which have been cooked or heated (such as meat. fish, eggs and most dairy products) may lose-up to 50% or more of their essential amino acids due to the creation of enzyme resistant linkages caused by the cooking. So we can see that many of the so-called "complete proteins" are not even completely used by the body.
