Before we got started, we precooked some shredded chicken in our instant pot (Don't have one? Get an Instant pot here: (amzn.to/2WucIcE)
Susie made guacamole with two whole avocados and one lime. She ate almost an entire avocado while making it, so these were VERY sour. She added some fresh chopped red onion and some cilantro, aka "cilantra."
Susie is making a non-traditional nacho recipe, meaning she is just winging it. Layer some chips, choose your toppings, and get stacking!
This recipe is great for kids because they can choose their own toppings and layer everything by themselves. For her toppings, Susie chose black beans, corn, olives, shredded chicken, cheddar cheese, guacamole, pico de gallo, sour cream and cilantro. You could try bbq chicken, refried beans, whatever floats your taco boat!
