Recipes
MARINADE INGREDIENTS - Makes enough for approximately 1 kg Chicken etc.
Full fat yogurt 2 cups
Tandoori Masala 3 tbsp
Salt to taste
Ginger & Garlic Paste 2 tbsp
chili powder to taste
Kasuri Methi (ground fine) 1 tsp
Gram/Chickpea Flour 4 tbsp
Veg/Sunflower Oil or Ghee (extra for brushing) 2 tbsp
Lemon Juice 1/2 a lemon
Red Food Colouring (optional) for desired colour
RAITA
Full Fat Yogurt 1 cup
Garlic Powder to taste
Salt to taste
Colemans, or Equivalent (bottled) Mint Sauce 1.5 tbsp

I saw a chef who made really good chicken tikka use no yoghurt at all. He said it will dull down the spice flavours. He said he sometimes add a tiny bit of Turkish yoghurt as it has little water content (just for coating). Thigh is always the best, because it has more fat and doesn't overcook like chicken breast. Personally, I add saffron to my marinade instead of colouring.

Yes, I know of recipes where no yogurts used. They call the good stuff 'hung yogurt' in India. They put it into muslin cloth and let it drip it last drop of water. Then again, the dairy products in India a far better quality than in the UK. If you've ever tried to make paneer with British full fat milk, you'd need litres of it just to make a small block, not like the higher fat Indian milk. I agree about the fat on the thighs 👍

Made this on Saturday for friends and added kashmiri chill powder. It went down very well thanks! We wont mention the grill fire. RIP wooden handled skewers from Marakesh...

Thanks Ed, I preheated the inventory on maximum temperature for about 30 minutes and just used the ovens heat, no broiling. My oven temperature gets to around 260 degrees/in F, that's about 550

Hi, preheated 25 minutes, always max temperature as it's trying to mimic the ferocious heat of a Tandoor oven 🔥

This is so bizarre that you have posted this as I have literally just finished making the masala marinade to marinate chicken from your cook book 'The Ultimate Indian Restaurant Cookery Guide' and was about to message you with a couple of questions. 1. When your recipe states Chilli Powder is it best to use Deggi Mirch or Kashmari chilli (I have both) 2. The Tandoori Masala Powder in your recipe - I have Tikka Masala powder...I'm presuming this is the same (all are from Taste Of India) I like the addition of the flour as a bonding agent. I will add it next time.

Hi Jed, Great! Deggi mirch is a blend of low heat chilli for colour and Kashmiri Chilli is also for colour so they're interchangeable. Yes, tikka and Tandoori Masala are the same. Generally, tikka is chopped ingredients and Tandoori refers to a whole chicken leg etc. Happy cooking 🍳
