This Yummy Stewed Oxtail with fish sauce is delectable and delicious.
RECIPE:
3lbs Oxtail
2 large onions(sliced)
1/2 cup of coconut Oil for sautéing onions
2 cloves garlic(chopped)
salt and pepper to taste
1 tbsp curry powder
1 tbsp coriander powder
1tblsp cumin powder
1 tbsp paprika
1 tsp white white pepper
1 piece of mace(crushed) (Optional)
3-4 cloves (crushed)
3-4 Whole Allspice (crushed)
1/2 cup tomato paste
Secret Ingredient: 4 tblsps fish sauce
METHOD:
Wash oxtail thoroughly in salt and vinegar or lemon. Season with spices. You can marinade overnight if you wish. Pour oil in large pan or wok and sauté onion until translucent and slightly brown. Add seasoned oxtail. Sauté/fry for 10-15 mins - turning regularly. Add chopped garlic and incorporate. Add 6 cups of water and tomato paste to pan in which oxtail was seasoned. Stir and incorporate. There will be spices left in that container. Pour this mixture into the pot with oxtail and stir. Cover and cook for 2-3 hours or until oxtail is tender and falling off bone slightly. 15 mins before end of cooking add fish sauce and stir. Enjoy this delectable Umami flavor Stewed Oxtail.
