Good evening John, gotta send a huge thanks for sharing your recipes and sauce-making tips. You've inspired me to make/ferment my own. I just bottled this recipe, our second fermented sauce, and it's just fantastic! I appreciate the extra flavor and complexity in your videos; so many on the web are too simple and one-dimensional. FWIW, we set 1/3 of the batch aside after pasturing and added a slosh of Spiced Dark Rum - OMG, hot sauce for adults and delicious, but we did notice the alcohol delivers the heat right to the back of the throat. I suspect the ice cream will tame that - hehe. Appreciate the videos, your approach is spot-on!

Hello John, Can vegetables, fruits or other ingredients floating to the top hurt the fermentation process? Does it go bad? Appreciate and thank all your knowledge :)

as long as you have a good airlock you should be ok.. just watch for mold and skim off if needed

Do you think it's possible to reach 165 degrees with a household blender? If not, would blending and then heating over a stove work for the pasteurization process?

tried that and it will not work .. but as you said you can blend and then heat slowly on stove. A household blender will not get all the pulp out like a vitamix so you will have to strain the sauce .

Could you please tell me what pH meter do you have. I have never fermented before and I want to make sure I have the right acidity as you explained so I need to get the right pH meter. Thanks
