Nigara Hamono is located in Hirosaki, a part of the Aomori Prefecture on the northern tip of Japan. With ancestry dating back to the edo period to over 350 years, tracing back to its swordsmith ancestors the current generation upholds the legacy of its predecessors. Former Nigara Hamono family, Kunitoshi Nigara, was a highly praised swordsmith during the Showa period and won many accolades for his creations. Nigara Hamono now headed by 7th generation President, Mr. Toshiju Yoshizawa, focuses mainly on kitchen cutlery featuring in house made innovative damascus patterns never before seen. Go Yoshizawa, age 35, is a young blacksmith who is the company president's son and has decided to go back to their blacksmithing roots. He now makes unique and stunning tsuchime knives and some hand-folded damascus.
Bunka: A cross between a santoku and nakiri, the bunka excels in veg prep where push/pull chopping is used. Bunka’s also sport a pointy tip, perfect for scoring mushrooms and dicing small veg!

I have one and no matter how thin and aggressive the edge is, still not a good performer at all. But looks great…

i love their stuff. very under rated imo, in a world where a lot of these are over rated. for sure not known for ootb edge tho. every single one i've seen had barely an edge on it. but apparently they do make them nice and sharp so idk whats going on. they have a youtube now you can check out, they have vids where they show how they do things.

I will have to go check it out. I appreciate that. I love how beautiful it is. It wasn't that easy to sharpen compared to what I'm used to. I didn't have a problem, but it just took a little longer than other knives made with the same steel. I need to apologize for taking so long. I've had a surgery on my knee and some other things going on. We've had the court case for my car accident. We had to deal with that as well. We've also had some other major things happening personally. Deaths in the family and lots of arrangements to be made. Also, I'll let you know that I will be having another major surgery in June and will not be making it to the Blade show. I will be out of work for two weeks because I'm having all the extra skin cut off of my body. We do apologize for an interruption of videos if it were to happen. Will try to shoot some head for you guys so we can fill the space. That being said, thank you for checking out the show. Thank you for your support and your comment.

You could get that knife sharper. The whole thing gets like ultra-complicated, though. I just found that two knives, different steels, different countries, sharpen differently on the exact same stone with the same pressure and strokes. I notice that when you compare stones, you use identical knives to limit the comparison to the stones. It might be interesting to take two different knives on the same stone.

I hear you but we're trying to be a scientific as we know how to be. There's lots of variables and in the end it's just subjective.

That knife is a beauty. Didn't cut the tomato out of the box? Not important at all. After a few times using it, it would have lost that sharpness anyway. You will have the knife for decadet. Important is how well it's made and not how the first sharpness is...

We've definitely learned over the years that it's not that important, but it doesn't sharpen that well either. I love the night and was happy to get it and I've just got too many to compare it to so I'm still not sold exactly. I have another one by them that still in the box that I'm waiting to try with a different steel.

Early on in the video it said you had an accident. Hopefully you are on the mend and I wish you all the best. The knife is beautiful. You have referred to this knife and certain others knives as "Masculine". What does that mean? If I change my gender to that of a female, would this knife no longer be suitable for me? :)

I am getting better and I appreciate you mentioning it. It's just a long process. I am a hairdresser by trade. In the normal world we would consider all things that have an oval or round shape to be feminine. It doesn't mean that it takes on a female characteristic. It just means that lens itself to femininity. It's hard to type what I mean. Masculine tends to be harder, more square. When we cut a man's haircut, we like to leave the sides of his hair vertical. That gives him a blockage look any more rugged exterior. The triangular geometric lines of the bunka knife tens the land itself towards what I would call masculine sense its counterpart, that Santoku has the rounded front end. We think of men is being traditionally rugged and kind of blocky and we think of women as having curves.

The only nigara i got out of my 33 knives, the worst performer. i had to do an extensive reprofiling, acid etching, resharping to get it "ok"

I own 3 Nigara SG2 knives. Love them all, but the Kiritsuke hits a very sweet spot. I noticed we shop from the same store! Next on my list is a santoku and a nakiri. Why is it I can't sharpen them so they are as sharp as new, but I can make a garbage knife scary sharp, like sharper than my good knives? (I know why the cheap knife doesn't retain it's edge, the steel is soft) Can you help me understand why I can't get a good knife scary sharp, but I can do it on an entry level quality knife?

I have some videos on sharpening that type of steel. Sometimes that thick Damascus can get in the way. So you have high speed powder to steel and you need to be able to sharpen it with certain stones. You need to make sure you feel the burr. That sick Damascus on that knife can actually hinder you. The bevel on that knife is very small, so it can be hard to do it. Wow, that’s one sexy knife. I’ve always pondered the idea of a nakiri with at least some sort of a tip. Those “eyes” in the Damascus pattern are “typically” created through drilling shallow holes during the forging process followed by filling them in by subsequent forging. Not guaranteeing that’s what they did though, but that’s typically how it’s done.

There’s many different patterns of Damascus. I think this type is called Dragons Eyes. In fact you could make your own knife by buying a Damascus blank online and creating a knife by what’s known as the “stock removal process” and then having it professionally hardened. Basically that means sawing and grinding away what you don’t want. If you’re careful you might be able to get a small knife out of the stock you cut away. Pay close attention to the size requirements you’d need.

@@trappenweisseguy27 On Facebook someone told me that this is not the pattern that I had expressed in the video and that the pattern by that name is a 70 something layered Damascus. This one is only 42 layers and so it is not the name that I stated. You are correct

No worries. There’s all sorts of patterns. I looked into it a couple of years ago and was impressed by what I saw from an outfit called something like Alabama Damascus, or Damascus Alabama. I might still buy a blank, but currency conversion and shipping would make it a whole lot more expensive for me. Stay away from the Pakistani or Indian stuff. Looks good, but suspect performance. Best to stick to US/Canada stuff.

That is what the company did. I didn't do it. That's the way it sold on all of the websites. I checked more than one to make sure it wasn't a typo

It is a K-tip nakiri because of the height of the blade. You can see it and feel it when you hold one.

Because it is not a bunka, it is a nakiri with a ktip A lot less belly, and taller They also make bunkas, if you want to look at the differences between their bunka and ktip nakiri
