Had them today - tried the uncle sauce and decided to follow in niece Ae's footsteps once I figured I could comfortably handle the spice. So spicy and so good! I drank so much water, haha. Uncle Roger is such a champ for including the recipe in the video - you bet I'll be making those at home soon.

@@Bayofthe91st except the Marco Polo thing is a myth. pasta existed in Italy prior to his travels. heck, the ancient Greeks were making pasta. any noodle Marco Polo would have brought back would have been a rice noodle anyways.

Besides, the wheat and other grains came from West Asia, most likely Iran, etc. The pasta you see today in Italy isn't possible without contributions from other nations. (Someone got really mad when I outlined things like eggs weren't native to Italy, and neither did tomatoes, the cheese, the wheat, the barley, the sorgum, durum wheat that makes Semolina (Ethiopia and maybe into Western Asia)... etc.) Oddly enough, eggs are said to be from maybe India or Indonesia, since chickens aren't native to Italy either. What the pasta probably first looked like was something like gnocchi without the potato. What is definitely native to Italy are *some* of the mustard family plants. But there were wild variants outside of Europe that were also cultivated.

Healthy food is often an excuse for cutting down on the more expensive ingredients in Malaysia (I know it's the opposite in the west because it almost invariably costs more there). That's why whenever someone tells me to try "healthy food" in Malaysia, they get my best sneer and death stare.

@@tomlauris it should’ve just been a shelf stable sauce. No need for real crab, to send it frozen, or to include DiCecco pasta you can buy at any store. It ends up being $25/serving. I can go down the street and get fresh made crab pasta for that price.

We, Gollamen, are using Carolina Reaper of Indonesia, Katokkan from Toraja, Sulawesi. You can import it. In our tiny humble food court unit in Plaza Blok M, we mix Katokkan into our garlic sambal for rice-based menu, we also combine it with red chilli padi for our Matah Chicken Katsu and also we pinch it for our Gochujang Chicken Katsu ramen. @@kirakelvinart2169 There is one regency called Tana Toraja South Sulawesi which is famous for its world class coffee as well as Katokkan / Katokkon recently. Toraja also has a chilli padi variant called Lada Barra/Bara which it is believed more spicy than regular chilli padi. You may compare your location with the weather and soil condition in Borneo (Indo or Malay ?). Usually Gollamen Jakarta is buying the chili from Collective Traders in Toraja, Makassar, or Java (Jakarta, Bekasi, Depok, Bandung). We can buy it from marketplace (Tokopedia, Shopee, etc) if urgent. Recently many farmers also sell its seed only.
