Yamoussoukro, Côte d'Ivoire - Welcome to Toumodi, a town just outside of the bigger Yamoussoukro, Côte d'Ivoire (Ivory Coast). And today Germaine is taking us for an Ivorian bushmeat tour where we’ll be cooking and eating some of the tastiest jungle food delicacies of West Africa!
We’ve eaten our way through the beautiful West African country of Côte d'Ivoire and today we’re in the heart of the country, home to the Baole tribe. Along with a rich culture and food, they are known throughout the country for their love of bushmeat and wild meats which can include deer, rabbit, and one of the most prized meat delicacies, agouti which is a huge rodent that’s also known as a grass cutter.
First, we stopped in the town where there’s a cluster of roadside restaurants specializing in bushmeat of the day. They had rabbits and deer, and I was excited to try some of the local deer. The meat is first smoked to preserve it, then it’s cooked into a stew with lots of tomatoes and chilies to make an incredibly tasty sauce. We ate it along with pounded local yams, which is locally known as Futu.
We then headed to the jungle camp where we first had a free range grilled chicken with plantains and chili sauce. I also had my first taste of Ivorian banji, palm wine tapped directly from the sap of the oil palm tree. It’s something truly spectacular, a perfect balance of sweet and sour.
For the agouti, it was put into a traditional clay ceramic pot, with onions, tomatoes, and chilies, and simmered until tender and juicy. It was so tasty. We ate it along with yams, plantains, palm oil, and of course, more banji.
It was another incredible food experience in Côte d'Ivoire, West Africa. A huge thank you to Germaine and Mr. Pokou for arranging this incredible time. With 4 big ethnic groups broken into over 60 smaller ones, the Ivory Coast has so much to offer in terms of food, history, culture, landscape & discovery. However, with limited time, this was a fair representation of the country as a whole. Here, we finish off in Baoulé country, where tubers are part of the main dish. These people are essentially same as the Akan people of Ghana. We eat the same food and share the same culture. Our languages are even similar if you pay close attention. Too sad we got divided and many of our people don't know about each other. Thanks Mark and Belle Cote D'Ivoire

These people are beautiful. Inside for sure, but their skin, their hair, their cultural expression reminds me of MY extended family here in Ga. USA. Country folk seem to share many food and cooking and communal concepts that span thousands of miles.

Well u have to remember alot of recipes in the country were passed down from slaves, slaves who came from this part of the world, west africa that is. Its obviously mostly washed down but you will see common concepts for sure. Im African living in Canada, and I can relate & enjoy eating any BLACK cooked food, its usually very homely & warm, be it Caribbean, Soul Food(When I visit US), African & south american.

Hi, Fred! Thats just cause half of the tribes in Cote d ivoire are originally from Ghana. Specifically the Baoules who are featured in this last video, are Ashantis who fled from Otumfo Osei Tutu's war torn Empire in the xviii th century. Their queen was the niece of the Emperor Opoku Aware. Her name was Abla ( or Abrewa Poku.

Because not all of Africa is green like this. some countries in Africa are desolate they don’t have the lush greenery. And also the soil matters they can’t grow everything and so there are some things that just will not grow they’re just like you can’t grow certain fruits and vegetables in parts of America. So that’s why they have to import food

I love how Mark is really trying to show us genuine and authentic cuisine of different cultures from different country, he even went to a small village and interact them. Other vloggers wouldn't do it and would only stuck in restos but you, you went to next level of authentic-ness

im zimbabwean and i noticed they dont use crayfish to flavour their food like nigerians, and the meat is much more softer, but i love both countries food, i noticed West Africans use Palm Oil in everything, in my country palm oil does not exist, and we dont eat plantain. we make our swallow with corn. and we dont mix different meats in one pot. very interesting learning how others do it

Although they look similar Ivorian food is very different from Nigerian food for example we use very minimal seasoning for our dishes as opposed to Nigerian cuisine that requires a lot of cray fish, curry powder, paprika and so forth

One thing about West African food, not as big on aesthetics as many other cultures ( in my opinion) but very well textured and tasty. Love it.

To those who ignorantly are criticizing the agouti, please Learn that agouti even though is classified as rodent , has nothing to do with rat. It eat grass and precisely rice leaves and other roots. I live in Canada and if I had a choice would prefer that meat rather that some tasteless and disease causing local meats . Knowledge is power
