Greg is a self-taught survivalist from Canal Flats, British Colombia, who, since he was a boy, has read nearly every book on the topic. When he is not out in the wilderness, he is a professional dry-waller. For decades I have cooked, smoked, grilled, etc. more fish, wild game, hogs, etc. outdoors than I can express. I love cooking over open fires, in dutch ovens, smokers, in pits and more. The old ways produce such amazing foods.

I met him out in canal flats a long time ago with my family and I was shocked because I just watched him on alone around that time and he was doing a little lesson for the kids like starting a fire or bow shooting by the trailer park there we hungout afterwards for a little bit and he came panning with us and taught us a thing here and there he’s a really nice guy I remember looking him up a while later and found out he had a channel it’s crazy to see how comfortable he’s gotten since the first couple of episodes he came out with lol

He's right on with this. I went to Nome, Alaska in August on a salmon fishing trip. The guide was old school. He had salmon laid out curing doing the same method with the brine. And smoked low and slow using cottonwood.

that's not even brine. It's a powder. It's not the authentic way to smoke fish, as indigenous people didn't go to the Himalayas to get their salt. And cottonwood isn't good for smoking a fish.

One of the things I like most about, Greg, regardless of his income, or fame, the man doesn’t change. He’s the same down to earth, genuine man, that we met when he first started making videos. I can’t tell you how many creators I can’t say the same about. To be fair, some comeback, after they take a big financial hit, but many are too far gone to figure out why the views are no longer coming in. SMH

I've been cooking for like 6 years and have always ignored that rule of thumb. To this day I know it's still wrong every time I do it, but I can't help but think I know what I'm doing while I feel with the blade. I'll cut things I'm holding in my hand towards my palm. I've never cut myself. (Knock on wood)

I watched this guy on Alone in Patagonia. Loved this guy. Seems like a genuinely cool dude. I wondered what happened to him after the show. Glad he started a channel so I can see the cool stuff he does.

​@@Mike-pn8ln In its original language it simply means "women" nothing more. Considering it was referred to as Squaw Candy by the female Alaskan Native that gave to me, it was obvious it wasn't meant in the contemporary use of the term. Not a racial epithet but the non-derogatory meaning.

Living in Buffalo, between two Great Lakes it is a fishermans paradise. Done salmon, lake, rainbow, brown and my favorite brook trout in a old refrigerator as a converted smoker with apple wood and a brown sugar and Kosher salt brine.

Try hold the tail of the fish and start from the tail while fileting instead of holding the head. You'll keep your fingers much longer

I love that you use brown sugar on fish I randomly figured out a good recipe for salmon using brown sugar and it tastes AMAZING! I take half a pound of bacon and fry it in a pan and once bits crispy i use the grease to fry the salmon to Perfection. After finished cooking use; Celery salt Black pepper Onion powder Garlic powder Lemon juice And use about a full tablespoon of each depending on how big the fillet is, mix each seasoning in a small bowl and then layer a full coat on the fish make sure you cover the full fillet and use the lemon juice to drip drops onto the seasoning but becareful not to over use and wash the seasoning off then use brown sugar and do the same thing coat the fillet then drip another layer of lemon juice use like a single drop from a bottle of pure lemon juice and start from the top and work left to right top to bottom one drop at a time and then take the bacon and crumble it up and top the fillet or you can take a bite of bacon with eat bite of the salmon i find that works better since the crumbled bacon tends to tumble off the fillet. Its comes out AWESOME! but dont let it sit too long because it looses its magic when it cools its gotta be eaten hot if it does sit for too long stick it in the oven for about 5min on 350°F that'll be good to get it sizzling again but won't cook it for too long and dry it out. 👁️✊✌️🤘🤙👁️

My brother brines his trout then smokes it and it’s turns out similar to how I think yours does. ABSOLUTELY DELICIOUS

I make steelhead trout (local to lake Erie) or salmon from the market, and make my version of sweet and spicy candied salmon. 1x Cup Soy Sauce 1x Cup Brown Sugar 3x TBS Molassas 1/2x Cup Maple Syrup 1-4x Tbs red pepper flakes (to taste) Pinch of salt/pepper If you dont have a smoker, you can add 1-3 Tbs of liquid smoke and put them on a dehydrator. It helps to cut them up into 4" long sections, then slice those into quarter to half inch think slices before soaking in mixture. Dry at about 160* for about 3-8 hours depending on room humidity, fish thickness, air flow, etc. Hope you like it - we call if salmon crack for a good reason lol

Salting and sugaring and smoking food is one of the oldest preservation methods and best tasting! I can tell this fish turned out great!

I've been a chef for 30 years. I get so jittery when I see the blade pointing towards human flesh. it's so much safer to fillet from head to tail than tail to head. If you can't do that, place a towel in between your hand and blade or get a cut proof glove. It's an awesome video yet again
