Hi Ruth! You can try to make the rice Vinegar without the rice vinegar! I don’t know if it will work, because I didn’t try to make it without it! Let me know after 6 weeks if it work! I Wish you luck!

how is the rice cooked? like when you eat it or submerged in boiling water for 5 minutes (sterilised)?

I just cook it regular way by boiling it and until it cook, but this time with nothing added!( no salt, no butter, no oil)

When fermenting anything it is common practice to jump start your new ferment with a little bit of a previous ferment. One example is to take a little bit of yogurt or kefir from the store or a previous batch to jump start your new batch. Once you have some fermented item such as yogurt or your apple cider vinegar or rice vinegar, just save a little for a new batch.
