The recipe for this Sunday's video is #chorizovegano. Without cholesterol, without cruelty but with a lot of flavor and very authentic, really. For a snack or for a fabada this vegan sausage is great, made to suck your fingers. Here is the recipe:
INGREDIENTS:
- 160 g dried or dehydrated tomatoes
- 100 g of raw almonds
- 80 g of crushed oat flakes
- 75 g baked red pepper without skin
- 1 tablespoon garlic powder
- 1 tbsp onion powder
- 1 tbsp La Vera paprika
- 1 tsp cumin powder
- 1 tsp oregano
- 1/2 tsp thyme
- 1/4 tsp spicy paprika (optional if you like picantito)
- 1 tbsp Himalayan salt
- 1 tbsp apple cider vinegar
- 3 tbsp pump rice or stewed round rice
- 2 tbsp extra virgin olive oil, EVOO (optional)
The step by step is very simple:
· We start soaking with hot water to cover the dried tomatoes for 30 minutes.
· Crush the almonds and oat flakes until you have a powder or flour.
· We are going to crush the drained tomatoes and the red pepper in another bowl until we have a dough.
· In a large bowl add this mixture, crushed almonds and oatmeal and the rest of the ingredients.
· Mix well with a fork BUT WITHOUT LISTENING! Be careful that we want to keep the shape of the rice so that white spots are visible in the mixture.
· Finish mixing with your hands until you have a consistent dough
· Shape chorizo or chorizo. We decided to make a big one
· We are going to roll it in vegetable paper at the same time that we squeeze and compact.
· We close the vegetal paper by the sides rolling it up and we make a knot with some threads
· Now you must rest in the fridge for at least 24 hours so that it compacts well
· You can already enjoy your vegan sausage in sandwiches and, for example, you can also make it round and round or put in cooked, you will see how it gives flavor to your meals!
