I made the muffins- with some modifications and they turned out amazing! I used 2/3 cup of banana flour in place of the cup of oat flour to make it grain-free. Instead of the green powder I did use chocolate protein powder, date sugar in place of the brown sugar, a little less agave and a little more applesauce so cut back the sugar. (And to replace that, I added melted chocolate chips in a little swirl on top, which hardened into deliciousness.) They’re awesome😍😍😍

Seitan is my favourite at the moment 😊 but usually lentils! Anyway, great video again! Oh and knead the seitan for longer, let it sit for 5 minutes and then cut/tear/shape it. If you want it to have more 'bite' try mixing in some black beans/chick peas or any other bean - it makes a big difference! Also, don't let the water come to a boil. That makes it spongy too! I hope this helps :)

I like to add grated/shredded (just use a cheese grater) onion and beet to my seitan. The beet helps give it a slightly pink/more meaty color. You can also try adding some tomato paste or even a few drops of liquid smoke. To give it a chunkier texture, I've added some rehydrated textured vegetable protein (TVP). It helps it to not seem like one big slab of rubber. Depending on what kind of meat I'm trying to mimic, I also like adding vegetarian chicken or vegetarian beef bouillon to the dough. In the U.S. there's a brand called Edward & Sons Not-Beef or Not-Chicken. Both are vegan! I like to steam the seitan in foil, but if you're going to simmer it, try adding a quartered onion directly to the pot. You can also add some more tomato paste to the broth. I prefer to keep it in one big log shape, and tie it up in some cheesecloth before I boil it. It gives it some more texture and helps hold it's shape. Then you can just cube or slice it afterwards. (PS I'm a huge fan of your channel! I'm vegetarian but your meals really inspire me.)

I think you have to knead the gluten mixture even more and make shire there’s no air bubbles and it looks uniform, it looked like you didn’t knead it enough.

I've been boiling the seitan, letting it drain and rest for a few minutes and then fry it up in pan with a little canola oil. Seitan soaks up olive oil. Then I let it rest after frying. Gives it a really nice meat texture (kind of like pork to me) and is really good cold too. I've found refrying it makes its spongy again, not sure why.

I just found out the reason why I felt so sick is becasue of Gluten, its such a new way of cooking... This has helped as I find other ways to now cook.

Watch some Connie's RAWsome kitchen, she makes some amazing seitan meat, and is good for tips and tricks. Avantegarde vegan also has said that kneeding the dough for longer and also bashing the shit out of it with a rolling pin or fists really helps the texture become less spongy.

@@CheapLazyVegan I started 3 months ago with eating vegan way, i like these meat sub jackfruit, hearts of palm, cauliflower i just made seitan meat and the only way i can eat it is if i add peanut butter in the batter or the other way is with vinegar, BBQ sauce, mustard, tomato paste and other spices you put in meat, i don't like the way "seitan taste" that's why i eat it that way or i can't eat it, in short that means i will not last eating this vegan way! Like michelle L. said watch Connie's videos i think the way she makes it looks more like meat by adding beets and carrots "i think that's great" it looks like roast beef) look for that video, But for me taste is everything and if it doesn't taste good it's hard for me to eat it, because food is suppose to be enjoyed! PS. make seitan a day or two before it will harden up in the fridge TO HAVE THE TEXTURE MORE LIKE A MEAT.I LOVE YOUR VIDEOS!

i use bethanys vegan kitchen seitan recipe, it uses nooch and chickpea flour as well as your other ingredients. it is truly beautiful. give it a go x

vegan zombie's seitan recipe is really good. the texture is just about right. Adding chickpea flour helps the texture too.

To get your seitan more dense you gotta beat the dough up for a quite a while then let it rest.... Also you can totally boil it in the broth but I find it you really want an intense flavor you can cook it in a log wrapped in tin foil boiled in water or steamed... That's tasty too

I think you cooked the seitan for too long in the broth, which causes it to go spongy. I would keep it whole and cook it in the broth for no longer than 45 minutes, and then slice it up and fry it. And add liquid smoke to the dough or to your sauce to take it to the next level! It's delicious.

Sarah K no the opposite. Long and slow cooking on medium temperature in the oven will get you the best results. Not submerging the whole dough in the broth but just for the dough to sit in. Then baking it for 1-1,5 hours, and also adding a little bit of normal flower to the seitan will work wonders as it will loosen and fluff up the spongy chewy texture of the seitan.

Hm, that's a totally different way to how I've made it. I've made it two ways, simmering it for 45 minutes and then frying, or baking it without boiling it first to get more of a "rib" style seitan. I got the overcooking thing from Isa Chandra, she says that having it on too much of a boil or cooking for too long makes the spongy texture.

Interesting how so many people say to knead the seitan longer, I prefer not to knead it at all. The sponge-iness is probably because you used a rolling boil, the water should just be boiling. Honestly I like baking mine, using a casserole dish or something, bake dry (but covered in a little bit of oil) for the first 30 min and then with about two cups of water for another hour or so.

So do you freeze 2 of 5 meals in order they dont get spoiled and the other 3 you put in the fridge? I cant imagine cooking for 5 days at once because I am afraid its going to mold.

Great presentation and video the Chocolate muffins look tasty. Chocolate is my favourite food I couldn't do without. I am glad vegans don't have to give it up, just make sure it doesn't contain dairy, eggs and honey crunch.

Seitan should definitely sit in the broth for about a day! Also I find that the texture improves if you bake the little seitan pieces in the oven before putting them in the broth!

The muffin recipe confuses me a bit because you used baking soda and baking powder but you didn’t use any ingredients to activate the powder and soda. For example, adding a dash of vinegar or lemon juice to your wet ingredients. Your muffins would have risen a bit had you activated the baking powder and soda. :)

I kind of find it very relaxing when people do voice over like you did.. :) like your hair. you can make oat flour by pulsing the oats.. save your money.

Also cutting the seitan thin and cooking it in a pan changes the texture in my opinion. The Kale Sandwich show has a really good recipe for seitan bulgogi. It's super yummy! Your videos are so wonderful the recipes are so delicious and simple (:

I made the muffins but replaced the flour’s for just two cups of regular flour...as its all i had. 15 minutes in oven at 400 degrees was plenty! Also was hoping they would be sweeter. Min me turned out very bland and stuck to the wrapper.. Next time will try adding a banana or more sweetener.

For perfect Seitan you need to knead it for at least 10 minutes. I would also advice you to add some chickpea (gram flour) to the dough because it improves the texture. Cook it only on a simmer and it's best if it chills one night in the fridge. So quite a lot of prep but worth it :D

UGH I wish I liked this. My boyfriend and I had it and had to throw the rest away it was so bad. It was so chewy and just had no flavor and the weirdest texture. :(

Neely O'Connor - i've tried their edamame pasta and thought the same thing - the first time I tried it. I tried it a second time and took way more care to not over cook it and it was AHMAHZING! Maybe same for the black bean pasta?

Is brown sugar vegan? I think it still is processed through bones. Maybe use coconut sugar or raw sugar? Or agave it sucrose

I know this is super late but I'm gluten free. You can add extra baking powder and soda and then some xantham gum (like 1tsp - 1 Tbsp) and that acts kind of like gluten.

You need to knead that seitan before. Have you ever baked bread? There's a point in the kneading process that the dough becomes stretchy so that it takes a bit to tear it. You want that same sort of stretchiness with seitan, because that's due to the gluten development.

For the size of the seitan you made, it will need around 10min, for a steak may be 15, an so on ... an hour just for a big dough :D

Seitan: add a little bit of normal flour to the seitan powder, just 1-2 tbsp per 200 grammes of seitan powder or so. And then do NOT cook it but make a broth and bake it in the broth slowly in the oven for 1-1,5 hours. The seitan should not be totally submerged in the broth while cooking. The texture will be amazing. All this other stuff (kneading it or sth) won't help much in my experience. The secret is adding normal flour and slow cooking so that the dough does not suck in too much water.
