My Favourite Instant Pot Meal (Vegan/Gluten-Free & Delicious)

I have been making this meal weekly and every time I post a picture of it you guys aways ask for the recipe so here it is. It's really simple but super healthy and delicious.
In this video I also talk about how pressure cookers increase many antioxidants in food and how lycopene from tomatoes can help gum health.

Recipe
1.5 cups french lentils drained
2 cups veggie stock (+ water - see note below)
1 tsp (or more) onion powder
1 tsp (or more) garlic powder
0.5 tsp black pepper
2 tablespoons of tomato paste
7 small (or 3 large) carrots, chopped
1 large sweet potato, chopped
directions:
1. rinse dry lentils and put in instant pot.
2. Add veggies stock and water. The amount of liquid should be approx 1" higher than the lentils.
3. add spices and tomato paste and stir everything together.
4. add chopped carrots and sweet potato on top.
5. Put instant pot lid on and make sure it is closed tight, cook on BEAN setting for 12 mins.
6. Enjoy! this makes a lot of food so its perfect for meal prep or freezing.

I just wanted to let you know that I have watched your vids for a few months now and decided to be ALL IN 3 weeks ago. 3 weeks on a no added oil plant based diet as a Tyep 1 diabetic. I am super excited about the changes I have had already. Week 1 was tough as my body was basically detoxing and adjusting to high carbs so my blood sugar was quite high. After the first week I began to lower my insulin as my blood sugar levels dropped tremendously. I have decreased my insulin by over half so far and am not having to portion control very much. My husband and kids are not on board but they ARE eating some of the meals I make for myself. I will have an A1c check here in a week and am very anxious to see if it is lower yet! I will keep you updated! I would love to thank Crystal as well because she was really what got me interested in your videos! She is so funny and I love her personality! Thanks!!

Put a towel over the pressure valve when you release it, no more burned hands and the moisture wont ruine your kitchen cupboards.

Or, buy a plumbing pipe elbow for a few cents and place it over the released vent for a quick steam release. You can aim the steam away from you and your cupboards.

I am so glad that I discovered your videos! I am enjoying them and feeling so inspired to improve my eating habits. I've been vegetarian for 30 years - the last 5 or so years of that vegan. While it is great that we have so many more choices now than when I started, I've also become more lazy about cooking and now it's too easy to choose more processed vegan foods like canned soups, veggie burgers and such. Still healthy, but I really feel like I need to get back into more whole food. Thanks for sharing your knowledge, ideas and great sense of humor!

I didn't have tomato paste on hand so I used curry paste instead and it was SO good. Didn't need to add much additional spice since the curry paste already had a lot of spice in it. I really appreciate all your recipes! And would love more instant pot ideas. Your channel has really guided me on my vegan journey. Thank you so much for everything!

Great recipe perfect canvas for flavor. I modified it by blending 2 dates and 4 cloves of garlic with the veggie stock water combo and added lime juice, cinnamon, plum vinegar and smoked paprika. Came out great! Thank you!!

Oh man this is so good! I added some chopped onions in my lentils too, was super easy to make. Ate the cooked lentil mix on top of a giant bed of mixed greens with some added chopped veggies, ginger siracha sauerkraut, and some oil free fig balsamic and it's my new favorite lunch! Whenever I choose to release the pressure from my instant pot I cover the valve with a folded hand towel. It protects you from the burst of steam :) Of course, if you prefer a "facial" you can proceed with caution ;)

The utensils that came with the instant pot have notches on the end of the handle to release the valve easily and safely.
