in arabic this is called "Mloukhiya" and its served over rice and made with meat stalk. i grew up eating it..delicious with lemon, now as a vegan ill put coconut oil in it to sub out the ghee its usually made and make it with mushroom broth or powder, though im mostly raw ill still have some during the winter. Some put tomato in it. In Egypt its a show when they serve it to you in restaurants, they come out with the soup and fry up the garlic in the ghee in another pan and then pour it on top and it makes a sizzling sound thats crowd pleasing. What was it served beside it in the video?

@Ghareeb al Ghoorba - thank you for the information. Next time I travel to Egypt, I'll be sure to ask for Mloukhiya! In Nigeria, ewedu is commonly eaten with "swallow food" like amala (which is pictured in this video (recipe for it will be uploaded this week)), pounded yam etc and is sometimes accompanied with other stews like tomato. It is also eaten with rice, yam, potatoes etc
