Baking Okra with very small amount of oil seems better than frying Okra with too much oil. Will cook Okra tomorrow that way tomorrow

Can you get similar results without the palm oil? I would like to try your recipe but I haven't come across palm oil in supermarkets near me.

You can add some color to the soup with regular paprika. I haven't cooked with palm oil for over a decade since I started using paprika on Nigerian food. Works for everything, from egwusi soup to black eyed peas porridge.

Looks good. If u want a salt less option, replace the salt with seamoss. Also is it possible to make jollof rice without any oil?

Rats! I was hoping these wouldn't take so long to cook. But I just cut one in half and yes, it is extremely starchy. Not sweet feeling at all. 20 minutes on medium is a lot of heat. So I can just throw it in at the same time as my spinach.
