What a great idea. When we have a roast chicken, I take the bones and scraps and boil them with some celery, onion and carrots, and of course an assortment of herbs and spices, strain the broth and pressure can it. Typically, if I use some chicken bullion to augment the chicken taste, I will get up to six pints of chicken broth. With your mix of veggies and a jar of that broth with some supplemental water, that's a meal in a half hour. Thanks.

Same thing here 😌 My husband works for pizza ranch and brings home chicken frequently from the end of the day rather than toss it. I save my veg scraps and make broth with the wings and bones. I usually get about a gallon. I let it cool in 1/2 gallon jars, refrigerate it to get the fat to rise. Just used the broth and chicken today with some frozen mixed veggies and canned up 7 more qts of homemade goodness! 😋

Darcy from The Purposeful Pantry taught me that instant rice is merely cooked rice that is dehydrated. I think dehydrated rice would work better for quick heat up while camping, home for lunch, etc.

I always keep about a two year supply of instant rice in my house since it's so cheap. If doo hits the oscillating thingy I can use less fuel to heat my food. AND, thanks for this comment since I didn't know about the dehydrating trick. I love learning new things.

So when you’re cooking that you would cook it as if you’re making a pot of rice by adding a certain amount of water and covering it ? or just let it cook until the rice is done.? how much water would you add?

Hi Jinne, I went through my pantry today and found some dehydrated broccoli that I dehydrated last year. It's not much but it's plenty to make a cream of broccoli soup. It's inspired me to dehydrate more. Spinach too. Maybe even more spinach than broccoli because I use a lot of spinach. I like it in soups, casseroles, and in eggs. I doubt that I'll ever be able to buy a freeze dryer. But I'm happy with dehydrating. I'm saving for a wood burning stove for next winter.

I live in Oklahoma and we are famous for our ice storms. Two years ago we were without electricity for 15 days! After that I bought a little butane stove and stocked up on things we could heat and serve (Mac & cheese, canned chicken and stuffing and gravy, etc). I am new to vacuum sealing but I know it’s going to become my go to quick meals! I cannot wait to put up soup!,, Thanks so much!!!

I go ahead and shake the jars up to get all that spicy goodness disbursed throughout to give the veggies time to absorb some of the flavors before cooking. Maybe it’s just me, but I think it makes it a more infused flavor from the get-go.

Thank you🙏 Jenne. I just got a mini rice cooker for one of my seniors. She wants meal ideas. I have a pantry wall of dehydrated foods. We are going to make recipes in pouches. She is a diabetic with heart issues. I have to help her to cut the salt and add the flavor. Blessings from Chicago.

Usually when I see you are doing a recipe using your freeze dried ingredients, I skip it because I don't have or buy those preps. But I left this one playing while I was putting dishes away ,and happen to hear you mention you could do this with dehydrated ingredients. Duh.. why didn't I think of that ? Thank you for a great idea when I start dehydrating veggies.

I'm watching this for the 2nd or 3rd time and I decided that I would much rather make dried soup jars instead of canned soups. Either way they have to be heated up. Of course the canned would have the required water. Then again if one falls, breaks, dry easier to clean up or 5 second rule, scoop up and still use. 😊

Love the way you think! I had to reorder my dry goods pantry and used my swirl 3/4 pt jars to package some ready to go soup mixes.they are colorful and pretty on the shelf.

What a great idea! I’m not sure what’s wrong with me, I’ve been unwilling to open up any of my ThriveLife food, this might be just the kick in the pants I needed! I think with my crew I will add some beef dices or chicken. Also wondering about lentils in place of rice-?❤🇺🇸

If you have a dehydrator, you could make homemade broth and dehydrate it and use it in the soups. Right?

Maybe I can do a jelly jar for one person then keep in pint jars. Take to work and add boiling water, steep and eat from jar.

@@HomesteadCorner Thank you! I don't think it woul be that hard for me to get it but it sure is. Got to Goodwill and we found me a cutting board, spice rack and a bread box. My it was dirty. My husband found 5 horseshoes that looked like they were taken right off the horse or out of the barn dirty. At least we found something we had been looking for.

Question please as I don't use freeze dried food. When you cook the soup do the veggies taste okay because rice usually takes longer to cook than veggies so I'm thinking the veggies will be overcooked if they are all added at the same time of cooking? Hope makes sense lol...

I have multiple recipes for making an assortment of "meals in a jar" from dry ingredients as well as some cookbooks that use only food storage ingredients and water. However, unless I want to package some homemade instant meals for a camping trip that is only a week away, I prefer to keep all my dry ingredients in their separate, long-term storage containers. This way if an ingredient that has a much shorter shelf life (such as butter power, powdered eggs or sour cream powder) goes rancid before it can be used, it cannot spoil the other ingredients. Another advantage of not pre-mixing dry ingredients is that some ingredients benefit from soaking overnight before cooking (wheat grain and most raw dry beans and peas). Also, some ingredients can have a much longer cooking time compared to other ingredients in the mix (raw rice versus freeze-dried English peas). You never want to be stuck with eating a casserole or soup where some of the ingredients are under-cooked and still tough and other ingredients have been cooked into an anonymous mush. If you want the homemade equivalent of a "steep and eat" Mt. House instant meal, you have to be very careful in what ingredients you select. You want every ingredient in the mix to completely rehydrate at the same time and be ready to eat at the same time. Always do a test by preparing a homemade meal mix before committing your food storage to making multiple batches of this particular meal. You may find that you need to put the raw rice or dried beans in a separate bag inside the canning jar so you can prepare that ingredient separately from the rest of the mix and then mix it in just before serving.
