My first taste of green beans cooked this way changed my life. I'd always despised the canned grey mush and the cooked-to-death method favored in bygone days. My mother was astounded to learn I loved a vegetable. I made them for her, and she HATED them. I still laugh about it, years later.

I too grew up on canned vegetables and hated them. Once I was on my own and "discovered" fresh (and even frozen) vegetables, I started to love them.

Having spent three years in the UK I learned there were ways to prepare veg and meats other than Drowning them! Do not get me wrong, I'm a Southern girl, born and bred and i always loved vegetables but... WOW! The hubby, potatoes, potatoes oh occasionally drowned green beans with, yeah, potatoes. Now, he even eats beets! Now with these sessions (that do remember, from distant childhood, my mother saying that nobody would eat that! But she did sneak in a few tips) I think I can do even more! Step aside Betty Crocker, I'm on team Julia!!! 😂

@@floydvaughn9666 Yes! A friend's mom introduced me to it years ago, the first time I came to dinner. I could not shovel it in fast enough. She was so endearingly proud of that, and every time I was invited back, she'd give me a big hug at the door and whisper, "I made your favorite." She was an absolute gem!

I'm an older man who has always loved to cook. I've tried all the so called "healthy" ways to cook vegetables and nothing beats the French way for flavor. The recipe in her first book completely changed my feeling about Brussel sprouts. These days there is lots of talk about happiness being healthy. Delicious food brings happiness. Raw kale does not.

Fresh Green Beans :) Do same way as Julia but use tarragon instead of the parsley, the 2 pair so well

Even in black and white, that vegetable dish looked delicious and appetizing, and the rolls and wine make it a meal. No need for the hollandaise, although that would add a lovely touch. I also got a kick watching Julia cooking with chopsticks!

Lemon juice on the beans - I've never done that (though I apply lemon juice liberally on a lot of things), so I'll give it a try.

I like my beans blanched or steamed then lightly sautéed in olive or grape seed oil and finished with Mayer lemon juice. Sometimes I add garlic to the olive oil. So tasty

I used to spend Saturday watching cooking shows on PBS Galloping Gourmet and his clarified butter, Julia, Justin Wilson, Jacques Pepin, and Frugal Gourmet. Those are the chefs I remember fondly

I have Julia's cookbooks. Each day, I plan dinner for the next day by having my wife open the book with her eyes closed and place her finger on a page. I go out and buy the ingredients we dont have and the very next night- voila! Challenging, sometimes expensive but fun.

I rarely boil and squeeze spinach any more, with the exception if you're making something that needs a dryer cooked spinach but most things don't. So I just pan saute till wilted then add to what I'm making.

I like my vegetables cooked so they still hint at crispness. My elderly mom likes the texture of the canned ones after they've been cooked for a while. ... I wonder how Julia would have viewed microwaves back then. Microwaving vegetables can be surprisingly effective at cooking them quickly yet retaining some crispness.

i had heard that julia child enjoyed using new gadgets and inventions. she was a fan of the salad spinner and the microwave oven when they came on the market ... look at how she appreciated the red hot "rod" that her friend had made for her. hope this helps.

I usually cut potatoes into 1 inch pieces, dot with butter, salt, pepper, and parsley. Cover and microwave on high for 8 to 10 minutes. Gently stir to coat potatoes in the butter, add sour cream, chives and serve. Easy delicious potato side dish in 10 minutes.

Just a couple of weeks ago I was giving some of my co-workers a quick demo on how to microwave fresh raw green beans to perfection in the tiny office kitchenette with just a plate and a wet paper towel. I now have another pound of fresh raw green beans for lunches this week!

I come from an old Loyalist Canadian family and all vegetables were boiled until they were unconscious, then served with a dollop of cold butter. Thanks to Julia I learned that al dente vegetables were infinitely better. However, I abandoned the French approach to vegetables in the 90's in favour of olive oil over butter and virtually no salt at all. French cuisine has a deadly dependance on butter and salt. And no one has ever complained about my food.

Wouldn't it be easier to drain the beans by just emptying the pot of beans into the colander, instead of pouring the water through the colander used as a lid? (about 8:32) To cover them with cold water, just pour the colander full of beans back into the pot. That method that Julia is using looks difficult and dangerous because the pot is full of such a large amount of boiling water. It makes me think there will be plenty of slips of the strainer when it's used as a pour-through lid.

I've been cooking fresh green beans this way for years (ever since I got Julia's cookbook) and always dump them into a colander and run cold water over the beans or plunge them into a large bowl of ice water. Then I use the original cooking pan to finish the cooking. They are delicious. I can't imagine that the straining-water-through-the colander method would improve the taste.

I always noticed that too. She was a heavy smoker for awhile maybe that's why idk. But she lived to the age of 91.

I have a feeling that Julia's breathy delivery came from being in a hurry while recording the show "live" (as in only ONE take) -- budgets were MINISCULE back then.
